MSU Tennis

Sunday afternoon already??? Where did the weekend go?

Saturday night was spent being lazy at home.

After we spent the afternoon playing tennis in the intense heat here in MN.

We biked over to the tennis courts at Minnesota State University.

The University is also where the Minnesota Vikings have their training camp.

And training camp starts Monday with some of the players starting to come into town today.

So, campus is set up with tents for autograph sessions, signs and barricades for all the extra crowds and extra security all over!

I wasn’t sure if we would be allowed to get to the tennis courts, but thankfully, no one even looked at us twice!

Since, Abby didn’t get to come with us for tennis, we made sure to take her for a walk when we got home.

The rest of the evening was spent watching TV and re-hydrating!

Sunday morning was all for sleeping in and snuggling – well at least for me and Abby!

I finally got out of bed about 9 and was ready for breakfast.

Step-ups hurt so good

Friday was a looooong day!

Work 12 hours in Urgent Care. . .

then run 7.25 miles with Scott – our long run for the week.

It really couldn’t have gone any better. We didn’t need to stop to walk at all! And it was perfect running weather. A little hot when we first started and then cooled off perfectly as the sun went down.

I made a list of things to talk about during our run so that we didn’t get bored! The paper that I wrote the list on was pretty sweaty by the time we were done but we talked about everything except for one topic.

Abby wanted attention after our run, when we had collapsed on the couch!

This morning I was up bright and early at 7am! That is so not like me!

But, I took advantage of the early morning and took Abby to the Farmer’s Market.

It’s a pretty small market, but they have all the important things:

I got some lettuce, tomatoes, blue cheese brats! and this raspberry cream cheese roll for dessert tonight!

After, we hit up Starbucks for a non-fat iced caramel macchiato.

After watching Project Runway – so happy it’s back on!

I headed out to the YMCA for NROLW 1:A.

Whoa step-ups! I think I used a higher bench than last time and upped my weights. And I was feeling it. Seriously.

Such a good start to the weekend!

The scent of basil

I went to the gym this morning and did the New Rules of Lifting for Women: Stage 1:B.

Which consisted of:

  • deadlift
  • dumbbell shoulder press
  • wide grip lateral pull-down
  • lunges
  • Swiss ball crunch

I did a 10 minute elliptical warm up and then did weights. The whole thing took me about 30 minutes. I was pretty sweaty by the time I was done. .. weights always get me more sweaty than I think they are going to!

Again, I was the only girl in the weight room. But I just rocked out to my iPod and did my thing!

A good tip I picked up from Meals and Miles is to take pictures of the moves with my phone camera and then I can reference the moves before I do them at the gym. Such a helpful tip!

After workout snack: blueberry chobani yogurt with fresh blueberries on top.

Abby was being cute while waiting for me to be done with my snack so she could lick the container.

Eventually, she jumped up on the couch, and left a drool spot in anticipation of her ‘morning snack.’

I took Abby to pick up our share for this week’s CSA. The car smelled wonderful on the way home: fresh basil!

And now it looks so pretty on my counter!

Also in the bag: cucumbers, green beans, corn on the cob, onion, and potatoes.

I picked up the best bread at the Farmer’s Market too – perfect to go with our dinner tonight.

Scott grilled up spicy turkey Italian sausages.

Tri-colored rotini topped with tomato basil pasta sauce. Sprinkle of mozzarella cheese and some of our fresh basil on top!

I think there are cupcakes and a long walk with Abby for our Thursday night plans!

The New Rules of Lifting

Happy Tuesday! Hope you had a great Monday night, like I did. . .

Started off the morning with a hot caramel skim latte – sometimes the AC is so cold! Smile 

My morning snack was awesomeness. . . toast with maple almond butter and nectarine slices! Don’t worry, the extra nectarine didn’t go to waste!

Before lunch, I headed to the YMCA to start on Stage 1 of The New Rules of Lifting for Women!

Today: Stage 1: Workout A.

I did a quick 10 minute warm-up on the elliptical and then got into it!

The workout consisted of 5 moves:

  • squats
  • pushups
  • seated row
  • step ups
  • prone jack knife

Overall it went well. I worked up a pretty good sweat and felt like my muscles were tired at the end. I wasn’t too sure of my starting weight for each move, but I felt like I was challenging myself, so I think that is the important part.

I had forgotten how much I like to lift weights. . . Body pump will still be my all time favorite!

I’ll keep you posted with how The New Rules of Lifting for Women is going!

Lunch was more leftovers: pineapple brat, red new potatoes = both with lots of ketchup, cottage cheese and watermelon chunks.

Not much excitement during the rest of the day. . . Scott, Abby and I went on a hot and humid 4 mile run on the Red Jacket trail after work. Lots of watermelon was consumed afterwards!

And dinner: another summer staple: corn on the cob!

It was definitely the highlight of dinner!

During dinner we watched Tangled. The super cute Disney movie – have you seen it?

Off to watch a little move TV and then head to bed! Hope you had a great Tuesday.

What screams summer to you??? For me it is watermelon and corn on the cob! Love them. Winking smile

CTI + Pizza = Monday!

Last night, I hit up the YMCA for my Monday night CTI (Cardio Tone Interval) class.

This was a good one! We were all sufficiently sweaty afterwards!

We used a stability ball and a set of heavy hand weights (I used 8#). Remember each move is for 60 seconds. Repeat each circuit thru twice.

Circuit 1
Mountain climbers
Jumping jacks
Forward row
Hamstring curls on ball
Oblique twist

Circuit 2
Squat jumps
Floor to ceiling with ball
Chest fly on ball
Hands to feet with ball
Pushups with feet on ball – 10

Circuit 3
Shuffle jump
Steam engines
Balancing side lunge
Bicep and overhead press sitting on ball
Ball tuck

 

After class, I came home to Papa John’s sausage and pineapple pizza for dinner. Along with quick salads –> perfect Monday night dinner!

Happy Monday! Well. . . it is for me because I don’t have to work today! Well, not counting teaching CTI at the YMCA tonight! Winking smile 

This morning started out like most do. .. an iced caramel skim latte. yum!

A nice mid-morning bike ride = 35 minutes—> 7.1 miles.

Lunch was leftover plate: green been French fries, new potatoes, coleslaw, strawberries, crackers and egg white salad.

And finished with my new favorite snack/dessert = frozen fruit!

I got a huge bag of frozen fruit from Sam’s Club. I usually just use the fruit for smoothies. But last week, I was super hungry while blending up my smoothie and so I started eating the frozen fruit. oh.my.goodness. delicious. Perfect on a hot summer day. Sweet, cold and sorta creamy. . . my favorite: mango and pineapple. The perfect snack or dessert!

Green bean love

What a great Sunday!

Started off with an iced! caramel skim latte.

And a morning snack of a nectarine.

Then, Scott and I biked to the tennis courts for a fun time playing. We need to do that more often. .. good workout and fun!

Lunch was leftovers: egg white salad, strawberries, sunchips, and a cupcake!

I spent the afternoon being lazy on the couch, watching Drop Dead Diva (Season 2) – such a cute show.

A quick 2.5 mile run with Scott and Abby.

Then, already time for dinner.

After loving the green bean fries last night.  . . I knew I had to make more tonight. Thankfully, we got another bag of green beans in our CSA this week. Smile 

And green bean fries are soooo easy. Clean them up, trim off the stem. Drizzle with a little bit of olive oil and sea salt. Bake in 400 degree oven for about 15- 20 minutes until crispy and ‘fry’ looking! Winking smile

Serve with ketchup – so delicious. . .not the same as the best French fries ever (McDonalds) but still pretty amazing.

I also tried to make some coleslaw this afternoon. Another item in our CSA bag this week –> cabbage!

So, I checked out some online recipes: found this one on Allrecipes.com and tweaked it a little for what I had on hand.

I chopped the cabbage. Added some chopped carrots and onions.

Then, mixed together:

  • 2/3 cup miracle whip
  • 3 T veg oil
  • 1/2 c sugar
  • 1 T white vinegar
  • Sprinkle of salt

Add to the cabbage mixture and let hang in the fridge for a few hours.

I wasn’t too sure how it was going to turn out. Most coleslaw recipes call for mayo – so I liked that this one used miracle whip. But whoa sugar! I had no idea how much sugar coleslaw has in it.

It was really good. Scott went back for thirds!
