Pear and Greens Salad with Maple Vinaigrette

I made the most awesome-ness (don’t worry, totally a word) salad this week.

I thought the combo of fresh fruit (pears), with pecans and a maple salad dressing sounded interesting. Scott loves anything with syrup, so I figured he would be all over it! I wasn’t sure how the maple syrup would be as the main ingredient of the salad dressing, but it turned out really delicious.

Sweet, but not too much, and a nice compliment to the pecans (I used walnuts) and pears. I also added carrots, grapes, and a sprinkle of parmesan cheese to give the salad more bulk.

As you may or may not have noticed with all my random “test” posts and posts that go up for a few minutes and then are removed. . . I am having some problems with blogging. I use Windows Live Writer and ever since my 1 year blog-versary (I know, I know – the irony!), it won’t let me post without giving me this error message:

“Error attempting to connect to blog at:
The underlying connection was closed: An unexpected error occurred on a send.”

I have sent in a request to wordpress for their help, I have my super smart husband trying to figure it out, I have googled- but to no answers!

If you have any ideas or have dealt with this yourself, I would appreciate any help! Otherwise, cross your fingers for me to figure this out soon, cause I have some fun posts coming up (hopefully!).

One year blog-versary

One year ago today, on February 20, 2011, I started blogging on running4cupcakes!

I really had no idea what to expect when I first started, but it has been a great (almost) year. I haven’t really been blogging for a year yet because of my 4 month break this winter but I thought I should still ‘celebrate’ the day!

If only I had a cupcake!

I just want to take this day to thank all of my family for reading from the beginning and being supportive of all the pictures I take, you know, for the blog! And to thank my husband for encouraging me to start blogging and being supportive by waiting to eat dinner until I am done taking pictures, posing in pictures with and for me, and reading all of my posts.

And of course, I can’t talk about the blog, without thanking the dog – the true star of running4cupcakes!

I also want to thank all of you (the readers who are not related to me!) for reading my posts and commenting and supporting running4cupcakes! I really appreciate it. a lot!

Taking a look back. . . my first post! I really had no idea what I was getting into – but I am so happy I took that first step. Looking forward to another year sharing my day to day adventures with you.

Randomness from the week

1. Scott decided he should practice for the baby, by holding Abby in his lap.


Abby did not think this was a good idea.


Scott thought it was the best idea ever.


2. I hung up a new magnetic corkboard in my office at work.


I got some super cute magnets to put on it. Seriously Etsy is ridiculously awesome for everything.  Heart marble magnets from Sideproject Designs. Bottle cap magnets from Cherry Cute Shop.


Now I just need some pictures to put on it!

3. My caramel nonfat macchiato from Starbucks was in the cutest ‘Love’ cup.


4. I have been trying to cut down on the caffeine by going ‘1/2 caf’ in my lattes.


Good news: I can get the larger size and not worry about having too much caffeine for the baby and it doesn’t taste any different!

Just a quick comment on caffeine in pregnancy. . . You can have caffeine when you are pregnant! (***of course, each pregnancy is different and I would defer to your doctor’s recommendations for each person) But in general, just because you are growing a baby doesn’t mean you have to forgo your daily cup of coffee – or in my case – caramel skim latte. You should pay attention to the amount of caffeine you are taking in per day. Current recommendations from the March of Dimes is to keep daily caffeine intake less than 200mg per day. Check out this website from the Mayo Clinic for caffeine levels in food and drinks. The reason I am trying to cut down on caffeine now is just in case the baby doesn’t do well with caffeine when I am breastfeeding and I need to go caffeine free. Which I am hopeful after my trial with 1/2 caf, that decaf doesn’t taste any different either. I drink my caramel skim latte because I like the way it tastes, no specifically for caffeine. But we will see how the baby does. . . and make changes if I need to!

32 weeks!

32 weeks = 8 months pregnant. . . wow! Hard to believe that we are only 54 days away from my due date.

I love my shirt – It says “Sweating for Two” and has two cute baby footprints on the belly. I got it from For Two Fitness. Perfect for working out with a growing belly.

This week it has been really hard to not start freaking out about getting everything ready – I mean less than 2 months and we will be bringing home a baby! I still have a couple weeks until my shower, so trying to hold off on buying things until after then, but I want to get everything set. I have been spending WAY to much time on Etsy… looking at too cute baby boy stuff.

Anyway. . . thankfully I haven’t bought anything yet, just looking, much to Scott’s relief!

How Big is the Baby?

The baby continues to grow (along with the belly!)

According to (which sends super nice weekly pregnancy updates) the baby weighs about 4 pounds and is around 19 inches long. He is as large as a cantaloupe. I joke to Scott that at times it seems he is trying to break out of my belly. He moves all day long, which I love! Anything from huge kicks to rolls and summersaults. Each move is amazing and I could seriously spend hours watching and feeling my belly move. I like to snuggle up behind Scott at night and let him feel the kicks and moves too.

Exercising for Two

One of the most wonderful things of my pregnancy has been the fact that I have been able to keep running. Although at this time it is more like a slow jog, I am still able to put in a few miles. I don’t run every day anymore, usually every other day. The weight of the baby in my pelvis makes my hips and pelvis bone ache, if I do too many miles or try to run two days in a row. So, in addition to running, I also ride the bike (on a trainer) and have been doing some treadmill walking – usually an interval incline workout of some sort. I was worried about running in the winter with ice and snow, so back in November, Scott and I finally broke down and bought a treadmill so I could continue to run and not worry about falling and hurting the baby. And of course, we have had the mildest winter ever in MN with very little snow, ice and warmer than normal temps. I have still been using the treadmill though, because as my belly continues to grow, I feel a little safer being in the house with Scott just upstairs if something were to happen, and it is nice to control the pace and incline too. I think staying active has made for a much more enjoyable pregnancy too. I have not felt overly fatigued, no swelling in my legs (yet! keeping my fingers crossed) and, sleep has still been ok too. I am really hopeful that I will be able to keep up my slow jog until the baby is born. . . either way, I know I will continue to be active because I know that is what is best for me and baby!

Sparkling Valentine’s Day

Saturday lazy eats

Happy Saturday!

We are enjoying a lazy day over here. . .


Scott is over at his brother’s house today working on a home improvement project, so Abby and I had the couch to ourselves all day! Chopped, American Idol, Biggest Loser, Project Runway All Stars, oh my!

My morning started with a fiber one bar on the way to the YMCA to teach water aerobics.


I was pleasantly surprised that my normal one piece swimsuit still fit over my growing belly. I always forget how a water workout can be so good because I really don’t teach it very often any more. . . hopefully can get back into it after the baby is born.

After class. . . a caramel skim latte (in my new mug from the husband for Christmas) and some couch/TV time.


And my new favorite snack: Justin’s maple almond nut butter with banana slices.


So delicious and so easy. . . thanks to Tina at Carrots’N’Cake for the idea. Smile 

Lunch was leftovers from this week. I made cheese stuffed meatballs that I saw on Kristin’s blog a few weeks ago, except I served mine over fettuccini.




The rest of the afternoon was doing chores around the house and enjoying the fact that I had nothing that had to do!

Exciting times

Things have been busy in our house. . .

I slowed down my blogging in August when I was soooo sick with morning all day sickness. And it was all I could do just to lay on the couch, eating saltines and drinking ginger ale. Thankfully, I did not have to work during that time because I was in between jobs. Then, September was busy with starting a new job and there didn’t seem to be much time for blogging! And time just kept slipping away and I can’t believe it is February already. . .

Hoping to get back to blogging again. . . Still running, making new recipes, and getting ready for the newest addition to our family. Look for a few posts a week to come!
