Maple glazed fish

I made dinner tonight!

Starting to figure out this whole working Mom thing. . .

1. wake up
2. snuggle time with Luke
3. get out of bed (boo)
4. feed Luke
5. play
6. get ready for work (*make coffee!)
7. take Luke to daycare
8. go to work
9. work
10. pick Luke up from daycare
11. get home
12. play with Luke
13. work out when Scott gets home from work
14. shower,
15. make dinner,
16. eat dinner,
17. bath time,
18. bedtime routine with book and bottle,
19. catch up on the Olympics/couch time with the husband,
20. go to bed and do it all again tomorrow! Winking smile 

Anyway back to dinner. . . looking for a quick, easy and tasty recipe? Check this one out.

Super quick with frozen fish fillets (I used tilapia). Topped with a tasty sauce. (I found the sauce on Carrots’n’Cake.) Pair with steam in the bag veggies and potatoes –> dinner!

Here’s the sauce:
1 T Dijon mustard
2 T maple syrup
Juice of 1 lime
1 T olive oil

And the recipe:
Mix 1st four ingredients together to make the sauce. (*I added extra Dijon mustard and maple syrup to mine – prob about 1 T extra of each – taste it and add extra if you like too) Salt and pepper fish. Cook in large skillet with extra olive oil. Remove from pan and brush with sauce.

I take the used limes and put them in our water glasses for dinner. Slight taste of lime in the water makes it more exciting than just plain water! IMG_0942

This recipe grabbed my eye because of the maple syrup in it. My husband LOVES maple syrup so I figured it would be right up his alley. And it was. He really liked the sauce. Me.. . not so much. Thankfully, I had a backup!

And the veggies (steamed garlic cauliflower) and mashed potatoes made for a great dinner. The mashed potatoes were from the freezer: Steam n’ Mash from Ore-Ida and were new to me.

IMG_0948 And they were super tasty. And way easier than making the real thing! Cook in microwave, mash, add milk and butter, mash and serve.

Now off to watch more Olympics! I wish there were more hours in the day for me to be able to watch all the coverage. .. So far I have really enjoyed watching Walsh Jennings and May-Treanor kick some booty in beach volleyball and Missy Franklin having so much fun swimming her heart out. What is your favorite so far???

Skinny baked mozzarella sticks

I made these mozzarella sticks over the weekend and had them in the freezer for a quick weeknight meal. Paired with a simple salad, they baked up super quick in the oven and made a great addition to the meal. They are perfectly cheesy, and not greasy! They hit the spot when you are craving cheesy goodness!

3 months!

Luke is already 3 months old. OK. .  . well technically 3 months and 1 week today. Smile

I did it (again)

Well, I did it. . . again.

I went back to work (again) this week and –>

Luke had his first day at daycare.

We both survived.

I cried at the drop off, while he smiled his little baby smile at me.

I was doing fine until I went to tell the staff person that when he gets fussy, he likes to be swaddled and bounced, (and now I am tearing up just thinking about it. . .) and then I lost it. The staff person was super nice and just acted like this happened all the time. Thankfully, I was able to pull it together to finish telling her everything that I thought she should know.

And then I handed him over. And went to work. I was able to see him thru the windows into the infant room before I drove away. I could see him being held by the same staff person who took him from me. And his little chubby cheeks. Content at being held. Seriously, broke my heart, but made me feel better at the same time. I knew that he would be well cared for and hopefully will have some benefits for him too.

In terms of dropping him off, it really couldn’t have been easier. I had to fill out a little sheet saying how he slept last night, when the last time he ate was, and any comments for the staff for the day. I think it took less than 5 minutes.

All the ladies at work were really nice to me today.  .. all understanding how hard the first day can be. And my large Caribou caramel skim latte was helpful too.

I  made myself wait until noon to call the daycare and see how he was doing. Thankfully I had a pretty busy morning in clinic so I couldn’t spend too much time thinking about it. When I called, he had just woken up from a nap and was getting some lunch and doing very well.

Thankfully, the afternoon went just as quick, and before I knew it, I was back to pick him up. He was being fed when I got there. The staff feeding him, stopped his bottle and he screamed bloody murder at being interrupted during a meal. And she told him, “I know your mad but I think you’ll like why.”  And he stopped as soon as I got him in my arms. Smile Smile Smile 

I got a sheet filled out with his details (diapers, naps and bottles) during the day.

We spent some time playing when we got home. I am hoping at some point to be able to fit in a quick workout, but for now, I was more than happy to skip that in favor of spending more time with my favorite little one.

I don’t know how tomorrow (day 2) will go. . . and right now I don’t want to think about it! I just hope it is better/easier than today.

Chicken stir fry

I actually made dinner last week! OK, it was a simple chicken stir fry, but still. . . progress! Smile

I saw this combo for a sauce on PBFingers a while ago and have had it in the back of my mind to make it since then.

Here is the sauce: (with the ratios suggested by Julie)

1/4 cup honey
1/4 cup soy sauce
2 T hoisin sauce

So, while the baby was hanging in the sleepy wrap. . .

I cut up 1 lb of chicken breast into bite sized pieces.

Cooked up the chicken with a little drizzle of olive oil until almost cooked thu.

Added veggies: I had onions and broccoli on hand, but you can use any veggies you want.

The two key ingredients for me in a stir fry are these guys!

I love them!

Added everything into the pan: 1 large onion, broccoli, mini corn, and water chestnuts. Cooked until almost tender. Added back the chicken and sauce mix. I like hoisin sauce, so I added extra of that to my sauce – probably about 1/4 cup total. And cooked until veggies are soft and chicken is cooked thru.

Serve over rice and top with cashews!

Perfect, easy and quick weeknight meal.

The sauce was tasty too. Love the combo of sweet honey, salty soy sauce and rich flavor of the hoisin. The only thing I would change for next time is less soy sauce and more honey/hoisin because this mix got a little salty for me at the end.

Netflix Instant Play

Being a stay at home Mom with a newborn means you can watch quite a bit of tv. . . while feeding, while he is sleeping, during tummy time, etc. I got tired of daytime tv pretty quickly. . . I can only watch The Chew so many days in a row

(which actually bums me out because I really like Michael Symon!), same for The Price is Right!

So, I quickly turned to Netflix Instant Play to keep me entertained!

First day back

Well, I did it.

I went back to work.

I wasn’t happy about it and totally dreading it.

And you know what, it was ok.

It felt good to be back at work, seeing patients and remembering why I went through so much schooling and training to do what I do.

I missed Luke like crazy and there was nothing better than picking him up and snuggling him after getting home from work.

And after working all day, Scott and I had time for a quick 3 mile run with Abby, then dinner with lots of giggles and smiling from the bumbo chair, some more playtime after dinner, and bedtime routine.

I was really worried about feeling like I didn’t have enough time to spend with him after being with him for 24 hours a day, but I am optimistic after how today went. ***I also had about an hour of playtime with him this morning before work too.

I have one more hurdle to jump next week –> daycare. . . Grandma Mary took care of Luke this week to make the transition back to work a little easier by not having to take him to daycare the first week back. Super nice to have her here and much easier to leave Luke with her for the day. (If you are reading this Mom – THANK YOU!!!)

But I am already looking forward to the weekend. .. Winking smile

Innovation

Mom’s need to be creative sometimes. . .

I had my first challenge with this last week.

Luke started using his jumparoo.

Unfortunately, it can only hang on trim over a door. So, we put it in the doorway from the entry off the garage into the kitchen. Nice idea, right? – he can hang in there while I make dinner or do stuff around the kitchen. . . Yup, it was, until I realized the door frame is too narrow and when he gets excited and whips himself around, he is really good at smacking his little head on the side of the door frame! So, I needed to figure out what I could put on the door frame at the level of his head that he could hit and not get hurt! And something that wasn’t too permanent and wouldn’t leave any marks. So, I wandered around the house trying to come up with something. . .

And something I did!

Diapers! The sticky tabs are perfect to stick to the trim and perfect amount of padding for his little head!
