Country Fest 2013

This weekend. . .

This is happening!

Laura and I are headed to Country Fest!! 7th annual trip. (Check out previous Country Fest 2012, 2011, 2010, 2009 recaps!!)

Thankfully, my parent’s Lake place is close by, so we drive in each night for the concerts and get to go back to sleep in our own beds at night. Camping and drunk people –> no fun for us.

So, during the day, we will be lounging on the dock and in the boat and at night, seeing some awesome singers. This year the big names are: Miranda Lambert, Montgomery Gentry, Toby Keith, and Jason Aldean.

I am Running4Cupcakes!

The best thing happened to me this morning. . .

it was not having to get up a bazillion times to console Luke who is getting his molars. . .

it was not getting up  at 4:40am to teach the 5:30am body pump class at the YMCA.

it was getting recognized as Running4Cupcakes!

I was getting my equipment set up and walked past another YMCA member setting her stuff up, and she looks up, and says – are you Running4Cupcakes? And I was totally surprised and flattered to be “recognized.”

Becky – you totally made my day!! Smile 

It turns out that Becky is an ultra-marathoner living in Mankato with her own blog – Prairie Runner. <—check it out!!

Grocery Challenge: Month 2 week 3

Another week already???

This week I just went to Sam’s Club and Cub Foods. We are still focusing on eating what’s in our pantry and freezer, so more fruit, veggies, and milk this week. And a few staples that were on sale. . .

Sam’s Club: total spent: $18.81 (milk and strawberries, blueberries, bananas)

Cub Foods: total spent: $31.09

There might be cake mix and whipping cream on my Cub receipt. . .

After swearing that we were going to eat all of the desserts in our freezer before making anything new last week, I came across this recipe for strawberry and white chocolate buttercream cake –> and I HAD to make it for a BBQ this weekend with friends. Totally reasonable, right? Winking smile

While I am totally into this grocery challenge and using everything in our pantry/fridge/freezer, I still want to do/cook/bake and that’s the balancing act.

Total left for the month of June: $23.55

Total doable! 6 days – I got this!! Smile

Weekend Update: 6/23/13

Happy Sunday night! Did you have a good weekend?? We had a great weekend, good weather, great activities and company. Couldn’t ask for anything better!

Our weekend started with dinner with my Mom at Axel’s Bonfire and their summer margarita flight. . . they were good, but I think next time, I would just get a big ‘ol margarita. Smile

Mom brought a new toy with her – a Luke sized picnic table! He immediately used it for some snacking. . .

Saturday morning body pump in the basement. . . Luke woke up at 6am with a wet diaper, through the PJs and sheets. Thankfully, he went back to sleep after he was dry – but I was awake!

Then a pedicure in the afternoon.

And then this happened! It. was. delicious.

I made it for Sarah, Matt and Brynn – who came over to play and have dinner.

On Sunday, Luke and I hung out and enjoyed the sunshine.. . 5 mile run, then a 2 mile walk with Abby on this awesome trail nearby our house.

Spent time watching Dad doing yard work and being a monkey on the new picnic table. . .

Summer 2013 to-do list

While I know summer didn’t technically start until today, June 21st, I have already been excited about summer – 80 degrees, sweat burning my eyes while running, little baby shorts, and smoothies for dinner. . .yeah, summers already here! So, that got me thinking about things that I HAVE to do this summer.  . . and of course, I made a list!! There is just something about the warm, sunshine weather that us Minnesotan’s only get about 3 months out of the year, that makes us want to be active, get out there and do things. And I want to take full advantage and not miss a thing. So, here is my summer 2013 to-do list!

1. Run around the lake ~14 miles

3. Picnic at Minneopa Falls

Chia Peanut Butter Power Bars

Man, do I have a great recipe for you today!!

I was at the YMCA for a Friday morning BODYPUMP class, and Kristi happened to be teaching the class before me. And she had made bars to share with her class, complete with recipe cards.

And she just happened to have one leftover! She got the recipe from our local Hy-Vee store. And oh my goodness, they are ridiculous.

I was excited about them from the start because I love anything that incorporates chia seeds. Love those things!

I seriously ate the bar she gave me and later that same day! made a batch for myself.

They are so quick and easy – literally takes less than 10 minutes to put together. With the exception of chia seeds, which I understand not everyone has in their fridge, you should have all the ingredients on hand to make them. The original recipe calls for raisins but Kristi made them with chocolate chips..  . which I think just takes these bars to the next level. Smile Since, then I have made 3 more batches. I took some to Melanie and Becky when we got together and I think Becky might spontaneously combust if I don’t get the recipe to her soon. . . they really are that good!

I have eaten them for breakfast, after-lunch snack, afternoon snack, pre-workout fuel, or an after dinner bite.

Ingredients
1 3/4 cup rolled oats
1/2 cup raisins or chocolate chips
1/2 cup maple syrup
1 1/2 T chia seeds
1/2 cup creamy peanut butter

Directions
Add all ingredients to a large mixing bowl.
Fold well until all the oats are soaked in nut butter and maple syrup.
Pour into a dish.
I used a 9×9 pan, the smaller the pan, the thicker the bars will be.
Chill in fridge until firm enough to slice.
Slice into squares and wrap in plastic wrap.
Enjoy!

Grocery Challenge: Month 2 week 2

Another week of grocery shopping done! This week I went to all 3 stores in town. . . Hy-Vee for their brats, Sam’s Club for the usual stuff, and Cub Foods for cereal and fruit (on sale!).

Sam’s Club: total spent $32.77. Bought the usual milk, blueberries, bananas, as well as a few things for the BBQ: cream cheese and chips.

Cub Foods: total spent $20.73. Stocked up on fruit (on sale – otherwise I buy most fruit at Sam’s), avocado, cereal, buns, free banana via Kid’s Club and corn on the cob (first of the season!).

Hy-Vee: total spent $26.39. Bought brats and hotdogs for BBQ, yogurt, sour cream, sausage.

Total left for the month: $73.45

I wish it were more! Stocking up on staples last week really made a difference. It a good thing that I stocked up on staples when they were on sale, that’s all part of the plan. . . we will just be more frugal going forward for the rest of the month, and diligent in using up what we have.

Also, Gina mentioned that I should get a Cub Kids Card for Luke. You can pick one up at the Customer Service desk and it is good for one piece of fruit every time you shop with your kid. So, Luke got a free banana! Yes, it’s only $0.27, but every little bit helps! Just like you get $0.05 for each bag you bring to use at Hy-Vee. I’m already going to bring my own bag, so if I get an extra couple of nickels for them, bonus!!

I did spend a little extra for the BBQ on Saturday, with buying brats, hotdogs, buns, chips and cream cheese (for a dip). But, that’s part of life and that is what part of the grocery budget is for!! I saved on dessert because we are really big on making big batches of cookies and bars (when Laura and I have a cookie palooza), and so I used what we had on hand and made a dessert platter!

**This helped too because last week when Scott was putting away my latest bars, another container of bars fell out of the freezer and onto the floor, causing a few to spill out. . . So, he said that I can’t bake anymore until our freezer is empty!! And with blogs and Pinterest, I am always finding new recipes that I have to make, so you can imagine me just tapping my foot while we try to work our way through our current stash of desserts! Winking smile Oh well, also good for the challenge too, right??

This week it was key to check the sales – fruit and corn on the cob was cheap at Cub, and finding out about the Kid’s Card at Cub is awesome too!!

Now, back to the fridge, pantry and freezer to use up what we have for the rest of the month!! We still have a pretty big stash – especially in the freezer, we haven’t eaten any of the Let’s Dish meals from last month or the ones I bought last week! They are sitting right next to all the desserts… Winking smile

Scott’s family came over on Saturday night to celebrate an early Father’s Day and Way’s birthday (on Tuesday!). Someone really enjoyed the strawberry fluff and hotdogs with ketchup.

Friday excitement

Happy Happy Friday!! Do you have anything exciting planned for the weekend?

We have a few things planned for this weekend that I am excited about. .. and that got me thinking about all the things that are coming up that I am excited about, so I thought I would share what exciting things are coming up!!

New house

We are building a new house! We are currently in the design process. . . which is equal parts stress, fun and exciting. We are moving about a half a mile from where we are now. We love our current house but is it on a busier road, especially with a toddler! We are hoping to break ground in August, and if all goes well, be moving in February-ish!!

Country Fest

7th annual trip to Country Fest!! And this year we have 1st row VIP Gold tickets. Who has two thumbs and is so frickin’ excited –> this girl!!

BBQ

Scott’s family is coming over this weekend for a BBQ on Saturday night to celebrate Way’s birthday/Father’s Day. To help out with the grocery challenge both Way and Ashley are bringing some yummy things to share.

Vegas!!

Every since Scott and I went there last winter, I have been itching to go back! And Laura is going to go with me. There is another medical conference that I will be attending, but I am super excited to go back again in September. Mon Ami Gabi’s French toast–> YES!!

Des Moines Half Marathon

So I’ve decided! I am going to be doing the Des Moines Half Marathon in October. I appreciate all of your supportive comments and encouragement with my decision. I have decided on the half, because every time I thought about marathon training, I just felt overwhelmed. .. and it shouldn’t be like that, it should be exciting. Also, half marathon training isn’t as intense as marathon training and I just feel like I don’t have the time and energy that I would like/need to do that training right now. Someday! But just not now. Smile I like having a goal, so I am looking forward to running the half again this year and getting some redemption from my horrible finish last year. Also, right now Scott is dealing with foot problems, but I am hoping he will get better soon and we can run it together again!

The newest release of BODYPUMP is out! I have been practicing it at home and it is awesome. The tricep track is killer and I love it!! I am enjoying having a regular class at the YMCA again – Monday and Wednesday nights. And I am looking forward to teaching it soon.

Coco Beach

Family vacation planned for December to Coco Beach . I know it is super far away, but I am already excited to take Luke back to the beach. He will be so much older than when we were in Marco Island in February and I think he will be so much more fun to play with in the sand and water.

And this book. . .

I just picked it up from the library this week and have heard good things about it, so I am excited to read it!!
