Friday Favorites: 11/29/13 {+giveaway}

Hey all – hope you had a fabulous Thanksgiving. We had a great low key day at home. We are headed to the cities today for Thanksgiving with my family. And then, I am super excited because on Saturday we are headed to Florida for a family vacation!! Cross your fingers for me for the 3 hour flight with a 19 month old goes well.  ..  any suggestions/tips/iPad apps you have would be welcomed!! And be ready for a weekend update full of beach and ocean pics. Smile 

Here are a few of my favorites from the week. . .

Pile on the Miles challenge. It has really encouraged me to step up my running mileage this month. It has been a challenge to get to my 100 running miles goal (12 more miles left before Sunday!). Spin training took up quite a few of my weeknights and so I didn’t get those miles in that I normally would have. . .but I put in 10  miles yesterday and plan to get in those last 12 with a run today and tomorrow (tomorrow’s run will be on the beach!!).

Mix My Own


Klara and her husband and their super cute pup just stated this super cool company. Basically, it is the unique opportunity to create your very own healthy breakfast cereal mix using premium ingredients. You can choose a muesli or granola base and then add your choice of cereals, dried fruits, nuts and seeds, and extras. They were nice enough to let me create  my own mix and check it out.


I  loved the addition of dried fruit and macadamia nuts to my mix. And it is perfect mixed with some vanilla yogurt. The freeze dried fruit can be a little tart, but it is really good mixed with the yogurt!

Popsations  –> specifically the white chocolate drizzled over classic caramel corn. They specialize in handcrafted gourmet popcorn made in small batches with the finest ingredients.


And Robin – the founder of Popsations – is just one of the nicest people you could run into. She was nice enough to send me this tin of their popcorn to check out and taste test. And now, we are hooked. Sorry to ruin the surprise family, but you are all getting Popsations for Christmas. Smile It is the perfect holiday gift. Also, they do special orders for weddings or corporate events. How cute would their little bags be for a wedding favor??

Yummy easy fruit salad

I know, most creative blog post title ever. I’ll work on my acceptance speech for the awards show. Winking smile 


Ok, but seriously, fruit salad is already super easy and super tasty, right? Well, what if I told you, with 1 simple ingredient, you can make it even better?

I’ll wait for you to calm down.


Vanilla pudding mix.


Yup, that’s it.

Amazing, right?

All you do, is make your typical fruit salad. In the winter, I like to use 1 can mandarin oranges, 1 can pineapple tidbits, sliced strawberries and halved grapes.


Then, add 2-4T (depending on how much fruit you have) of vanilla pudding dry mix to your salad.


Mix together.


So easy, right?

You can serve immediately, or the next day.

And people will think you are amazing.

The perfect addition to any Holiday meal. Or Tuesday meal. Or afternoon snack.

Weekend Update: 11/24/13

Hey! How are you? How was your weekend? Ours was really good!

Started out Friday morning with an hour long spin class, that was the final part of my spin training! It went really well!! It has been a busy past 3 weeks trying to fit in spin training in addition to everything else going on, so it is really nice to have it done! And also super awesome to be a spin instructor now. Smile 

And Abby went to The Paw on Friday to the groomers – and got the cutest bows in her hair. Love it.


Nap time run success. . .


And the best ever delivery. I won the Kind bar giveaway on Lauren’s blog and she was so generous with everything that she sent!! And I couldn’t wait to dig in. .. Madagascar vanilla almond –> deliciousness. Winking smile 


Then,  my Mom came down to hang out for the afternoon. . . we went to the mall.



And took her to check out the new house progress. ..


And then she was awesome and watched Luke while Scott and I went out for a date night. Boulder Tap House has the best burgers!


Saturday morning – quick 3 mile run while rocking out to my favorite Christmas songs. . .


Fruit salad to take for Thanksgiving dinner with The Thompsons.





And a great afternoon hanging out with family. . .



Even the dogs got some Thanksgiving treats. 




Sunday morning was spent with these two while Scott slept in. (I slept in on Saturday – we try to take turns. . .)


And I made some banana bread – with a twist – recipe coming soon!


9 miles on the treadmill while watching my first Christmas movie of the season –A Christmas Kiss. Totally chick flick and totally predictable, but still good.

Then, I made these for lunch. With my own twist of pineapple and pepperoni – our favorite pizza toppings. We ate them too quickly. No pictures. Smile 

And then rode the rollercoaster ride that was the Packers/Vikings game with these two.  .


Followed by more play time, taking some Christmas pictures of Abby and Luke, and getting ready for work. 3 day work week!! woo hoo!! Smile

Friday Favorites: 11/22/13

Raise your hand if you are excited for the weekend! You better believe I have like 6 hands up. Wait, what? Nevermind, just know that I am super excited for this weekend! This morning I finish up my spin training by teaching a full class – wish me luck! Saturday is Thanksgiving with The Thompsons (Scott’s family) and Sunday is football!!

Here are my favorites from this week. . .

Panera caramel skim latte.


I had a sad day last week when I ordered a large but got a regular. . . and didn’t realize until I got to work. Oh sadness. I mentioned it on the next trip to Panera and they totally made my day by giving me my caramel skim latte – large – on the house to make up for the previous week. Love my local Panera. Extra points for having a drive thru.

Carmelitas and text messages proclaiming love for them.


Key lime pretzels – from


OMG so good. Like so good. This bag didn’t have a chance in our house. Luke walked around asking for “pretzel, pretzel.” He would take the bag off the shelf and crawl into his highchair and ask for them.


And Scott likes to pretend he doesn’t hear him asking so he doesn’t have to share. Of course the bag that they were nice enough to send me to check out is long gone. And now I need to order like 9 more. . .

Border battles – Packers vs Vikings this Sunday at noon. GO PACK GO!!
Fingers crossed that Rodgers can be back in action for the game. And I
am super excited about making these.

Thursday Confessions II

Confession #1 – I hate when books are part of a series and I didn’t know it . . . I listened to an audiobook this past week (Under the never sky by Veronica Rossi) and I was getting close to the end and wasn’t sure how they were going to wrap everything up. . . and spoiler alert – they didn’t! It’s part of a 5 book series!! So, now I am on the waiting list at the library for the next book (Through the ever night)!

Confession #2 – I am still upset about day light savings time. Yes, ok, it’s nice that it is light in the morning, but I HATE coming home in the dark. It makes me sad.

Confession #3 – Totes. You know the cool way people say totally. Ya, I am not cool enough to use that word.

Confession #4 – Pumpkin. I actually don’t like pumpkin at all. I gag when I open the can and smell it. I don’t read posts where people talk about putting pumpkin in their overnight oats. BUT, I love this recipe and this one too. Go figure.


Confession #5 – Mixing yogurt and peanut butter together. I don’t get it. I think it sounds gross. But I see it on blogs all the time. Am I missing something?

Confession #6 – I eat breakfast in the car on the way to work every morning. My latest choice – balance bar dark.


Confession #7 – I drink a caramel skim latte every morning and I make
it last until lunchtime. The key is very small sips. And I get sad
when if it is gone earlier than 10:30am.

Confession #8 – The best part of my day on Wednesdays is watching
Survivor. I just love that show.

Confession #9 – I recommend calcium and vitamin D supplementation to
all of my patients, but I don’t take any.

Confession #10 – Sometimes I really screw up dinner. To my husband – I am really sorry about dinner on Monday night. I didn’t know you could mess up French toast, but I guess you can. Winking smile

it’s ok. . .

Just a friendly reminder to all my fellow bloggers out there. . . a little bit of a follow up to my comparison trap post.. .

It’s ok.. .

To unsubscribe from a blog, twitter follower, etc. Your time is important. Don’t feel like you have to read a blog that you aren’t getting anything out of or don’t enjoy. Same thing with Twitter, life is too short to follow someone who only posts negative, annoying things –> un-follow and don’t give it another thought!

To not post sometimes and don’t apologize for it. If I am reading your blog, I hope that sometimes life gets too busy and too fun to have time to take pictures and post. I would love to hear about it when you get back!

To be too busy with life to take pictures, be on social media, etc. <—same thing here, sometimes you need to put the camera, social media down and just be present and living life.

To have a super long to-do list that just keeps getting longer. I have such a long list of blog posts that I want to write and some weeks it just gets longer instead of shorter. And that’s ok. When I have time to write, it is nice to have a list of ideas to work on. . .

To not have professional head shots done or to not have a professionally designed header. It seems like all the bigger bloggers have super fancy self pics or headers. . and this is just a few examples of things that other bloggers might have.. . don’t make it something you have to do, now if you want to do it, then go for it, but never feel like you have to do anything!

To not be participating in the latest # craze, fitness trend, blog survey –> again, we are all busy, and if you try to do everything in the blog world, you could go crazy trying to keep up. Just do the ones that interest or sound fun to you. And let the other ones go. . .

What else should be added to my list? What should bloggers not feel bad about or worry about in the blogging world?

Unexpected perks from my Grocery Challenge

When I did my grocery challenge, I was happy to save some money, decrease our monthly spending amount and learn some new grocery shopping tricks. BTW I still need to check out Aldi – I hear their prices are phenomenal.

And yes, Jodi, I know, I still need to check out Wal-Mart!! Smile 

But, since finishing the challenge, I have found some unexpected benefits from doing the challenge, that are awesome!

I found some new recipes that I can make myself and customize how I want for breakfast, cheaper and healthier than just buying granola bars. I didn’t want to spend money on granola bars, so I did some digging in our pantry and found some recipes that I could make using ingredients that I had on hand. This ended up being cheaper and easier than I would have thought. And I enjoy eating them for breakfast much more than a store bought bar.

My favs are my chia peanut butter protein bars and fro yo breakfast bars.


There is less stress during the week around dinner time because of meal planning .. .


I now meal plan before I go to the grocery store and then write it down for the week. So, there is no getting home at 6:30pm after a long day at work and having to figure out what I can throw together for dinner. And Scott knows what’s for dinner, so if he gets home first, he can get things started too. Of course we deviate from this at times – sometimes  you just need some pizza and sometimes we have extra leftovers, but for the most part, meal planning –> awesome.

We don’t overeat. We really didn’t have a huge problem with this before, we both stop eating when we are full. . . but now we are much more aware of our portion sizes. We need the extra food for a “leftovers” meal and I use leftovers for my lunch at work. I also save everything. We used to just finish the last 4 strawberries or last handful of chips, even though we might be full. . . now I throw the leftovers back in the fridge or in a container for another meal. We also buy a stash of fruit from Sam’s every weekend, which has to get us through the whole week. .  so instead of just eating through a whole pint of blueberries (because they are so good!), we eat some and then put the rest back in the fridge for another night.

I know none of these things are rocket science – and it’s not. .. it’s just the little things that make the difference and add up over time.

Weekend Update: 11/17/13

Happy Monday! Hope you had a great weekend! We were busy around here. . .

Luke and I enjoyed the 52! and sunny weather – and went out for a run together.


Sarah and Brynn came to Mankato to check out the Christmas event at the Verizon Center.


Matt and Scott joined us and we all headed back to our house for Chipotle and good conversation. It was so nice to see the kids playing together, while we were able to enjoy some good conversation.

And the evening ended with some of this. . .


Checking out the new house. . . progress is so exciting!


A nice 8 mile run on Saturday morning. . .


Followed by Laura – my little sister – getting into town for the weekend! Lunch at Wendy’s –> awesome!


We were busy running errands on Saturday afternoon – man, the mall and Target were INSANE!! 

We had a great time chatting and catching up while making a double batch of carmelitas –> so so so good!!

And homemade nachos for dinner.. .  served on the cookie sheet. Winking smile 


We finished off the night with The Hunger Games and Laura checking out Jamberry nails!!


And she brought chocolate cupcakes with peanut butter ganache filling and chocolate frosting – holy yum!


She loved them!!


Sunday morning coffee time and more chatting. . . And Aunt Laura was ah-mazing and got up with Luke at 6:30am…


– and then when he went down for his nap – she got started on the cookies.  ..


Seriously, you can come back anytime. Winking smile 


And then, we can’t get together without doing crafts. So, an idea and a quick trip to JoAnn’s.  . .. details and final product coming up in a post!!


And then an awesome recipe for lunch. . . recipe inspiration from here. I topped mine with apricot preserves and pepper jelly. YUM! These would be the perfect Holiday appetizer.


The rest of the day was spent finishing the Hunger Games (yes, we couldn’t stay up late enough on Saturday night to finish it – we are officially old!), hanging out, and catching up on stuff around the house. I fit in a quick 3 mile treadmill run while Luke took a short afternoon nap.

Leftovers, TV, and cookies finished out our Sunday night. . . which is ok by me! 😉
