Friday Favorites: 5/30/14

Hey! Happy Friday. Smile

Got any exciting plans for the weekend?

We are headed up to the cities tonight to celebrate my birthday with Scott’s family. And then nothing planned for the rest of the weekend. Woo hoo!! Of course, there will be landscaping work, shelves to be hung, laundry, grocery shopping, farmer’s market, running, and hopefully some ice cream that I am sure will all be on the to-do list. :Smile

Here are the little things that made me smile this week.. . and per usual, feel free to play along in the comments or link up with your blog post too.


1. We got a driveway – waaaaaay better than just having a pile of dirt in front of the house. . . Luke doesn’t agree. Winking smile


2. Bodypump 90 is here! Just started listening to the music yesterday. Looking forward to doing the master class on the DVD this weekend.


3. Super clean car – I don’t think my car has been cleaned (on the inside) since Luke has been born. Ok, maybe some minor vacuuming and wiping down here and there. . . but on Tuesday, I took it in (Snell for the locals) for a full detail. It was spendy, but 100% worth it! My favorite is the fact that the dog hair that likes to collect in the chapstick holder is now gone!! *for now. Winking smile


(does anyone else call that little hole in the door their chapstick holder?)

4. getting back to clean eating 80/20 versus the 20/80 I did over the weekend. Oh man, don’t get me wrong, those cupcakes were amazing. But I didn’t love the way I felt on Tuesday after eating all. the. food. over the weekend. Loving starting my day with spark, smoothies for breakfast (frozen fruit, banana, OJ), Trendy Trainer’s artichoke chicken for dinner and leftovers, and lots of fresh fruit and veggies for snacks.

Healthy Living Summit–2014

Weekend Update: 5/27/14–Memorial Day

What a weekend!! Scott and I took today off too – so we are still enjoying an extra long weekend around here.

My weekend started with Friday morning spin/bodypump – with just Becky and I. We got a great workout in and it was the perfect start to the weekend. Smile 


Stopped at a friend’s house to visit their precious new baby and walked down to the local school for baby animal day.


Spark fuel for the road trip to the Lake.


The Lake. So happy!


Of course we had to bring Luke’s tractor. . .


Scott surprised me with a dozen cupcake from Buttercream for my birthday. YUM.


We started with salted caramel.


While Aunt Jenny and Lukie brushed each other’s teeth.


And sang songs with Grandpa Tom before bed.


Saturday morning at the lake always starts with doughnuts. <love>


And we checked out the local Amish auction.


Puppy nap time.


Saturday evening run.


Beach time.




We celebrated my birthday on Saturday night. . .

A cute and clever card from my sister, Jenny. . . who gave me a pink calculator.

After Luke went to bed, we broke into the cupcakes again. We split most of them into fourths so we could each time a few bites of all the flavors. My favorite was cookies and cream!


Sunday was the hangout day. . .


Another run – 5 miles – on Sunday.


Followed by more beach time.



Monday, we headed back home. And stopped to get my birthday Caribou.

My birthday is today – May 26th, so of course one of my favorite numbers is 26. For a birthday celebration post,  I thought I would give you all 26 things that you may or may not know about me. . .

  1. I have run 2 marathons – both in Green Bay, WI

7. I graduated from University of Wisconsin – Eau Claire with degrees in  biochemistry and molecular biology

17. My favorite alcoholic beverage is a margarita. Extra salt please.


18. My name is Katie – not Catherine, Kathleen, etc. which is one of the reasons we named Luke, Luke, and not Lucas.

19. I have run 7 half marathons and 2 marathons and have my Dad to thank for getting me into running.


20. My all time favorite pizza toppings are pepperoni and pineapple


21. Scott and I went to St. Lucia on our honeymoon


22.  Abby and I lived with my older sister, Jenny, in Nashville for a while when I was in medical school and celebrated Abby’s 3rd birthday.

Friday Favorites: 5/23/14

woo hoo for Friday, long weekend and my birthday weekend!! Smile

We are headed to the Lake for the first time this summer. And it’s my birthday on Monday. So, it’s going to be a good one! I am off to pack and get ready to go, but here are the things that made me smile this week. . .


1. Drive thru Caribou –> just opened up right down the road from me. Seriously, dangerous. Thankfully, now with Advocare, it’s not an every day occurrence, but a great mid-week treat!


2. The fact that this picture from last weekend is my screen saver.


3. The saying on the top of the Advocare Spark containers.


It just makes me smile and feel good about what I am putting in my body to start the day. And I just cannot even put into words, how amazing it makes me feel. #truth #lovespark

And my Spark shelf makes me smile too!


4. My boys in matching polos.


5. Jennie-O taco seasoned ground turkey

6. Surprise visit in the middle of the day to visit Luke. I had an unexpected break in my day on Thursday, so I took full advantage of the extra time and sunshine and went to see Luke! It made my day. Smile

BODYPUMP 89 Review

So, as you all know, I am a Les Mills BODYPUMP instructor and I teach at least twice per week at the local Mankato YMCA. If you aren’t familiar with BODYPUMP, check out my “what is bodypump? post.” Every quarter, Les Mills puts together new moves and music for the latest release.


I think that it almost always takes me a few times of doing a new release before I really love it. Now, there is usually a song or two that just aren’t my favorite for whatever reason. . . but overall, I really have enjoyed all the releases so far.

I took my training on BODYPUMP 84. Since then, I have learned the releases since then – 85, 86, 87, 88 and now 89. (Review for BP88 here.) I also have learned 80, 82 and 83, since some other instructors at the YMCA had those training DVDs.


So, here are my thoughts on the latest release. . .

#1: Warmup – “Not Alone”

This track gets you warmed up and ready for the rest of the class. You spend a few moves on each part of the body. Lightest weight of the class. It has a great combo of a double dead-row and slow deadlift, which matches the beat of the song and is a nice change.

#2:  Squats – “Raise Those Hands

Pretty standard squat track. 3 sets with 3 stances, so you get to really work the entire lower half. At first I didn’t love the song – totally techno..  .but like all BP music, it’s totally grown on me and I like it and think it helps pump you up for the squat track.

#3: Chest – “Where Did the Party Go”

I love the combo of using the bar and hand weights for the A-press. Tip: Go super HEAVY on the bar because you only use it for a short time before you pick up the hand weights and you can increase your chest strength!

#4: Back – “Me & You”

Whoa. Way different than anything I’ve done before. Tip – go heavy again in the bar for deadrows. There are no hang cleans or clean and presses! You use a big plate for plate front squat and presses, which really gets the heart rate up and increases the intensity!

#5: Triceps – “Applause”

I LOVE this track. It kills the triceps. And includes all the good stuff – extensions, pushups and dips. And the song is perfect. And I started using the big @** plate = awesome. Smile


#6: Biceps – “When You Were Young

Good mix of barbell and plates (or hand weights). I don’t love the top half curls. After being repeated 7 times, it’s a little boring at the end. BUT, I do love going heavy on the bar because you only use it for half of the song!

#7: Lunges – “Burn”

This track matches the name of the song – BURN! It does. It changes up the timing and changes the training stimulus = perfect lunge challenge.

#8: Shoulders – “True Hardstyler”

Another awesome track. Probably my second favorite of this release. Love the top half upright rows. And the entire mix of moves –>upright row, overhead presses, rotator raise. And it starts with pushups, which always gets the shoulders ready to go!

#9: Core – “La La La”

Fun song. Good mix of moves – crunches, leg extensions, pulse crunches, and rotating hovers (awesome!)

#10: Cool down – “Radioactive”

Good cool down song. I love that the stretches are a bit longer so you can really deepen the stretch. Always a great time to think about how amazing you feel after completing a bodypump workout.


Overall, I’ll give this release a thumbs up. Some great new innovations with new moves that adds the challenge you expect with a new bodypump release!

Jennie-O Taco Seasoned Ground Turkey–{recipe + giveaway}

In honor of Cinco de Mayo and as part of the Jennie-O Switch Circle team, Jennie-O was amazing and sent this awesome package to help celebrate.


We had just had tacos for Luke’s birthday party that weekend, so I put the turkey taco meat into the freezer for a later time.

And I am so glad I pulled it out this weekend.


We were in the cities all day on Sunday and by the time we got home, I just wanted something quick and easy and healthy for dinner.

Enter Jennie-O taco turkey meat + salsa verde + wholly guacamole = yum.


I served everything over lettuce. And Scott and I made build your own taco salads.


On mine: lettuce, taco turkey meat, salsa verde, wholly guacamole, and a sprinkle of cheese. (+ for being Advocare friendly!)


On Scott’s: the same + more cheese, sour cream, taco sauce and crushed up tortilla chips.


The Jennie-O turkey meat was flavorful and delicious. And the fact that the meat was already taco-seasoned, just one less step between me and dinner. I loved how quickly this entire meal came together! I will definitely be picking up Jennie-O taco seasoned ground turkey again for a quick, easy, healthy dinner!

We even ate leftovers the next night – this time in taco form.

Mine with corn tortillas, guacamole and salsa verde.


Scott’s with flour tortilla, sour cream, cheese, and taco sauce.



And then I ate it again for lunch at work the next day. 3 days in a row! Seriously, can’t get enough. So good. Smile

TYT #11–Freezer Meals Update

So remember how Laura and I got together a few months ago and made a bunch of freezer meals?

I promised that I would report back about how they survived freezing, thawing and cooking. ..

I did one update for cheesy chicken chalupas and pizza casserole. Now, I am back with 2 more meals. Both of these are Advocare challenge friendly too!

Meal #1 – crockpot chicken fajitas.


I thawed this one in the fridge and then threw it in the crockpot. To keep it advocare friendly, I served it over lettuce and topped with avocado and mango salsa. The original directions say to serve with tortillas, cheese and sour cream.

Overall, super easy to prepare – you can’t beat dumping dinner into the crockpot.

It wasn’t the most flavorful dish ever. I would think if I made it again, I would probably add more spice and maybe some jalapenos.

Overall grade for freezer meal = B+. It was a good (not great) meal, easy to prepare, and made dinner a breeze.

Meal #2 – crockpot chicken cacciatore


This is another crockpot meal, so same process – thaw overnight in fridge and then put in the crockpot. This recipe uses chicken thighs – which Scott loves and I do not. So this wasn’t my favorite dish ever. It was also a bit bland. I have made much better chicken cacciatore recipes before. BUT, Scott liked it and ate it for leftovers.

Overall grade for freezer meal = B-. It was an ok meal for me and it was easy to prepare.

I would totally make chicken cacciatore as a freezer meal again, I would just use my own recipe and chicken breast instead of thighs.

Weekend Update: 5/18/14

The weekend started with a trip to the grocery store. . . complete with my Starbucks caramel macchiato fix + bananas on sale!

Of course we had to stop and play in the ball pit.


And then, I put Luke to work. . .

Saturday morning run = 6 miles done. O2 gold = amazing.


Scott’s parents came down to help with Luke and building the window wells. Lunch at Wendy’s.


Crashed. With gator.


Saturday night was pretty wild in our house..  .



On Sunday, we headed up to the cities for a get-together at the park with friends.




followed by an afternoon ice cream stop.


And an afternoon run – Scott picked the route = 5 miles!
