Top 10 Favorite Clean Eating Recipes

Whether you are doing an AdvoCare challenge, just trying to eat better or just looking for something good to make for dinner . .. these recipes are for you! Here are my top 10 favorite clean eating recipes.

1. Balsamic Chicken. This recipe is #1 for a reason. It’s super easy. Delicious. I bet you have most, if not all, of the ingredients on hand to make this recipe. You can serve it over roasted veggies, quinoa or pasta.

2. Buffalo Chicken Quinoa. This one is amazing the first night and even better for leftovers for lunch the next day. Winner winner buffalo chicken dinner. Smile 


3. Chicken Curry. I love curry anything, but this recipe is super simple, easy and quick. Served over roasted sweet potatoes is my favorite.

4. Taco sweet potato bowls. Roasted sweet potatoes + taco seasoned ground beef + shredded lettuce + tomatoes + guacamole + salsa. Amazeballs.


5. Salsa Chicken. Ok, so you can literally not get a recipe that is any easier that this one. Salsa +chicken + crockpot = done. If you want to get a little fancier, you can add some spices, corn and green chilies.


6. Chili. A great staple with so many variations. My newest favorite addition is chopped carrots. Adds a little bit of texture and sweetness.

7. Spaghetti sauce with spaghetti squash. Ahhh be still my beating heart, spaghetti squash is my favorite. Top it with a hearty sauce and you won’t even notice that you aren’t eating a big bowl full of pasta. Honestly. It’s amazing.


8. Chicken Avocado Salad.


I have Becky to thanks for turning me on to my all-time favorite lunch. And this one is so simple too. Diced chicken + grapes + celery + avocado. Mash all together = lunch is done. A close second favorite is the same mixture but instead of avocado, use homemade mayo. Life changing.

9. Blackened Fish. I use this recipe and omit the brown sugar. Then, depending on my mood, serve it with corn tortillas or over lettuce or just eat it alone with some veggies.

10. Butternut squash soup. Simple and satisfying.


Bonus recipe – 11. Hummus Chicken.  So easy to make!

Friday Favorites: 6/26/15

Happy Friday!! My weekend started last night with the beginning of Country Fest 2015! Oh man, Rascal Flats = awesome. And I cannot wait for Keith Urban on Saturday night. Bonus that I get to spend the whole weekend with my sister!

Father’s Day–2015 {Luke’s gift}

Luke made the cutest Father’s Day present at school this year for Scott. 

And I just thought I would share. . . 


It was a pencil cup (made from a soup can), that Luke “decorated” with construction equipment. 

It had a letter in it:



When in doubt, or when problems arise, reach for your survival kit. 

It contains: 

– Marbles – to replace the ones you will lose. . .
– penny – to give you the cents (sense) to know how important you are. . .
– rope – in case you get to the end of yours. . .
– rubber band – to help you to remember to be “flexible”. . .
– paper clip – to help you hold it together. . .
– tootsie roll – to help you roll with the punches. . .
– lots of Hershey’s kisses – because I love you!

Scott also really wanted a new grill (for the past 5+ years), so that was an early Father’s Day present from Luke and I a few weeks ago. Those steaks we grilled last weekend were the perfect way to break it in. Smile

Weekend Update: 6/21/15

Oh Monday again? Seriously, the sunshine this weekend was so wonderful, it’s hard to be back inside again. Already looking forward to my run after work! 

On Friday, Scott and Luke picked me up from work for lunch and we took a picnic lunch to the local park. #perfection 



Saturday morning was a little rainy, so Luke and I put on our rain boots and hit up the Farmer’s Market. I picked up lettuce, sugar snap peas, fresh cheese curds, and fingerling potatoes. 



A wonderful afternoon family run. 


And then we headed up to the Lake for the afternoon. Where, apparently, clothing is optional. 


It was nice to see Dad and Mom for a bit. Both are doing well. And enjoyed some Luke time. 


And Mom’s popcorn is probably the best on the planet. We scarfed down her first batch that her and Luke had to make another batch. Smile 



Sunday started with an early morning run. 


And smoothies for breakfast. And I tried out a new life hack I recently heard about. . . to clean your blender, fill it with warm water and a little bit of dish soap and blend to clean. Worked awesome.


It didn’t get off all of the almond butter residue stuck on the side but it was way quicker than hand washing! 

Then, Scott took off to the cities to take in a car show with his Dad and brother while his Mom watched Luke. . . and I headed in to work an urgent care shift.

Sunday evening was a family dinner (salsa crockpot chicken), play time and bedtime. Too busy enjoying life to take any pictures. . .

And a little HIMYM to finish the night. Smile

Friday Favorites: 6/19/15

Oh man, I am super excited it’s Friday and even though I have to work late tonight and all day Sunday, I am still excited for the weekend. Looking forward to getting up to the Lake for some swim and boat time!! New dock just went in yesterday!! Smile 


Here are the things that made me smile this week. . . 


Swim lessons.


Luke started his first swimming lessons this week. So adorable to watch him doing “ice cream scoops” in the water. 



There are 1,000 reps in this BODYPUMP release and OMG you can tell. Tons of pulses, bottom halves and fast counts. It’s traditional BP taken to the next level. And I’m loving it. 

Barney on How I Met Your Mother.


Did you watch HIMYM? I never did and now I am finally watching it on Netflix – no spoilers please, I’m only on season 5! But how hilarious is Barney. I am a huge NPH fan and his character makes me LOL.

Clean eating (no sugar!) oatmeal cookies

So, you guys know I am in the middle of another 24 day challenge. .. and it’s going really well! But, the weekends are tough. That’s usually when we eat sweet treats – cookies, cakes, bars, etc. So, I was looking to make a little something to eat after dinner on Saturday night. I used recipe inspiration from a version that was posted on my AdvoCare’s group Facebook page (there are over 2,000 members!) and came up with my own version.


3 mashed ripe bananas
1/2 cup natural applesauce
2 1/2 cups oatmeal
1/4 cup Blue Diamond Almond Breeze Almondmilk Original
1/2 cup chopped pecans
1/2 cup raisins (optional)
1 t vanilla
1 t cinnamon

Mix all ingredients together. Place on ungreased cookie sheet. Bake at 350 degrees for 15-20 minutes.

Weekend Update: 6/14/15

Hey there!

Happy Monday.

I’m spending the day hanging with this guy, so I can’t complain about Monday too much today.


Super excited because he starts swimming lessons tonight! He is going to love it. And hopefully be a fish just like his Mom was. . .

Backing up to the weekend. . .

Kicked off Saturday with teaching back to back BODYPUMP classes, included the launch of 94. It. is. tough. and awesome. Smile 1,000 reps! And one bottle of spark was not enough!

Friday Favorites: 6/12/15

Fri – yay. Smile

Am I right? Ummm yup.

Anyway. . . whatcha up to this weekend? I have the launch of BP94 on Saturday, trip to the Farmer’s Market, more unpacking (well not really unpacking – now it’s organizing all the things we have unpacked. . ..), birthday dinner celebration with Scott’s family on Sunday. Hoping to sneak in some grilling, a few family runs, and maybe a trip up to the Lake to soak in some sunshine.

Spending time with my Dad.


I took Monday off from work to head up to the cities to hang with Dad while he was getting chemo in the hospital. He got to come home again on Tuesday. And fingers crossed, so far he is doing much better with this round of chemo than the last one!

An extra day with Lukie.



Then, I took the day off on Tuesday to sneak in some extra time with my favorite little guy. We hit up the Children’s Museum. Old McDonald’s, went for a run, and played outside. It was a great day.


The AdvoCare 24 day challenge. So, I admit it, I was eating terribly before I started the challenge. But it is just amazing to me how just a few days of doing the challenge – taking the supplements and getting back to clean eating can make me feel so. much. better. Don’t get me wrong, I would probably kill for a caramel latte right now. But I know my body feels so much better (and my wallet!) that I haven’t been drinking them daily this week.

Simple meals. This week, I have been all about eggs.


Scrambled. Mixed with a little diced turkey. Salt and pepper. Done and done. But not for breakfast – I had them for dinner one night and then lunch the next day. Winking smile

Text messages in my new car.


So, the 2015 highlander is pretty sweet. It will sync up with your phone and read your text messages to you when they come in. And it is this crazy woman’s voice that is sorta hilarious to hear reading texts. makes me laugh every day.

Hot summer running.


Summer is officially here. It was 88 degrees for my run on Tuesday. I thought I was going to collapse or sweat to death. But I loved every minute of it. It was fun to go back and read some old posts about transitioning to summer running to summer running and my love for summer running (totally need to get that kiddie pool out asap).

Cross Fit tips for starting out

I’ve been doing Cross Fit for a few months now. Spoiler alert, I am still loving it! But it was probably the most overwhelming new fitness experience I have ever done – more than even getting my BODYPUMP certification. . . so, I thought I would share a few tips for anyone who is thinking about trying it, just starting out, or even if you’ve been cross fitting for a while, some good reminders too. Smile


1. try it. you never know what you can do until you give it a try.  Bear crawl, box jumps, the snatch. All things I thought, yup, no way can I do that! But you know what. I can! And one of the reasons I love cross fit so much is that no matter what level of fitness you are, there is a modification/challenge for you.


2. listen to your coach and their cues. the coaches aren’t trying to bust your balls. they are truly trying to help you be safe and successful. So, use them. Ask questions. If something doesn’t feel right, ask, or better yet, have them watch your form. the coaches I have run into at my cross fit box are probably some of the best trainers and coaches I have ever had.

3. don’t add weight. yet. at my box, the coaches are always saying – you have to earn the weight. and that is SO true. Don’t feel like you have to RX a workout EVER. Take your time to learn the skills and master them before adding weight.


4. go to different classes/types/times/coaches. I’ve found that each class during the day has a little different vibe to it. I tend to fit in the best with the 6am class, so I try to make it to that one as often as I can. Now, the other classes are all good, but if you find the class where you click with the other cross fitters and the coach, it can be pretty amazing.


5. show up early/stay after. there will be lots of skills for you to work on and learn and while class will help you with those, the best time to practice is on your own. I tend to show up about 20 minutes before class. I spend the first 10 minutes warming up and then the next 10 minutes working on a new skill. Lately, my goal has been to master double unders. They are getting better, but it’s still a work in progress. . . and I’ll keep working at them! And after that, it’s on to pull ups and handstands!!
