Friday Favorites: smiles

Happy Friday!!

This was my first week back to work after having surgery, but thankfully it went well and the week seemed to fly by. . . now just to get through today and then on to the weekend. We don’t have any big plans – other than a 4 year old birthday party (her Mom makes the best cake!) and a trip to the Minnesota State Fair on Monday!!

Here are the things that helped me smile this week. . .


1. spark. Monday morning was t.o.u.g.h. but thankfully after I mixed up my spark, I felt ready to take on the day! #success

2. bath time. love.


3. national dog day. cuteness.


4. rocksbox. loved this necklace from my latest box.

5. Snack time.


So, I don’t know why I haven’t tried these almonds before. They are amazing. Super glad Influenster sent them to me to try out. They might be my new favorite afternoon snack.

Dinner made easy {thanks to Jennie-O}

As a member of Jennie-O switch circle, they occasionally send me products to try out. And a few weeks ago, I received a package with two ground turkey products – lean taco seasoned ground turkey and lean Italian seasoned ground turkey. It was the perfect answer to “what’s for dinner?” that week!

Up first, the lean taco seasoned ground turkey. . . into nachos.


So simple. Layer a baking sheet with doritos, sprinkle with cheese and drizzle with taco sauce. Put in 350 degree oven for about 10 minutes or until cheese is melty. Meanwhile, brown the turkey with 1/2 chopped onion. When the chips come out of the oven, top with ground turkey, and whatever you like on your nachos – I add chopped tomatoes, lettuce and sour cream.


Served on the baking sheet for minimal clean up. So stinking good and so easy!

Then, the next night,


I browned the lean Italian seasoned ground turkey and added a jar of spaghetti sauce. Served over pasta. Sprinkled with parmesan cheese. Yum!

I wasn’t sure what I would think of the Italian seasoning on the turkey. My Mom makes an amazing ground beef spaghetti sauce, and it’s hard to top that. While, my Mom still has the top spot, this was the perfect amount of seasoning and kicked up my weeknight dinner – win!


I will definitely be buying this product in the future.

Favorite Incline Walking Workouts

When I was recovering from surgery, I knew I had to take some time off from running, but I still wanted to get my sweat on. Thank goodness for incline walking workouts. Lower impact than running, but will still kick your bootay every time.

I thought I would share a few of my favorites, so the next time you are looking for a kick butt, sweat your face off workout, you can count on one of these. Smile

This one is crazy tough. The incline is high – taking it up to 15.0 and you are booking it with speeds up to 4.8.

One pinner said, On the off days of my interval running program. Sweaty Mess Walking Incline Intervals! I burnt 600 calories in 40 mins! I will be doing this a couple times a week.

I like this one because it is totally customizable for whatever speed/incline you feel comfortable with. . .

This one is tricky because you are at the same speed the whole time but taking the incline up up up really gets your heart pumping! Fit: 30 Minute Treadmill *Walking Workout.... Lord knows I can't run on a treadmill haha

Weekend Update: Low key

Hey! Happy Monday. Smile 

Today is my first day back at work after having the last 6 weeks to recover from surgery. Good thing I buy spark by the canister. #necessary Winking smile 

Anyway, we had a super low key weekend at home. The weather was a little chilly, so we decided to skip the Lake this weekend and just hung around home. .  . 

A trip to the Children’s museum.

What Abby does when she doesn’t want to come inside. . . lays in the middle of the street and lays on her back so you can’t pick her up.


Unfortunately for her, it doesn’t work. . . .

Eau Claire house tour

Geez. I can’t believe I haven’t done an official tour of our house. . . it’s only been 3 months .  . . Winking smile 

It’s a 2 story house with 4 bedrooms and 3 1/2 bathrooms. We are at the end of a road, which is nice because there is very little traffic. Our neighbors are amazing and Luke loves playing with the “big kids.” We also back up to the woods – both beautiful and super cool to watch for wildlife. We see deer and wild turkeys pretty much every day.

TYT – Recent Favs

Hi! Tuesday already? Craziness. Scott took the day off yesterday and I am on my last week of medical leave after surgery, so we took the day to get things done around the house and enjoy some extra family time. The weekend was pretty awesome too. . . finally got out on the Lake for some water skiing!


Anyway, today I wanted to share with you a few of my recent treats and favorites. . .

New Lulu shorts. I have been basically living in lulu shorts since my surgery and I needed a few new pairs. These are my new favorite. So comfortable. Perfect for summer.

Friday Favorites: One word favs

Happy Friday! Man, I am happy that it’s the weekend. Not too much on tap for us planned – teaching bodypump on Saturday morning, a trip to the Lake for some beach and boat time and binge watching House of Cards (seriously cannot get enough!).

Picky Toddler Eating–My #1 tip

It’s official.

Luke is a picky eater.

But, honestly, who isn’t?

I don’t like to eat peas or fish and if someone put them on my plate, I would probably whine and complain too.

But, those little taste buds are still developing, so I want him to try new things and eat a balanced diet.

So, how do you do it?

Thankfully, I had a Dad who was a genius with dealing with picky kids, specifically three little girls.

The answer – > Surprise plates.


Say what now? What the heck is that?

It’s the key to a quiet and happy meal time.

A surprise plate is a plate of food that you make while your child can’t peek (hence the surprise). Winking smile Usually, it’s a mix of different foods, basically, whatever you want them to eat that day or leftovers from the fridge.


**Yes – those are frozen peas on his plate.. . he loves them. Smile

Then, the key with a surprise plate – the rules.

There are 2 rules.

#1. You don’t have to eat everything on your plate, only what you want.

#2. No whining.


It’s amazing. As soon as my 3 year old knows it’s a surprise plate and that he’s in control of what he eats, he will eat and try more foods than if I gave him a standard dinner plate.

My Dad was the master of surprise plates. . . well, I guess he still is..  . I think at least once a summer, he will make all three of his girls surprise plates.

As a parent, it’s a great way to use up leftovers in the fridge. Dad would always use toothpicks to make turkey and cheese seem more exciting and he would always add sprinkles to something on the plate. Sprinkles makes everything better, right?

My best friend has three kids and they come up to the lake with us every year and a few years ago we introduced the kids to surprise plates (basically to cut down on the whining that always happens at meals times) and now every time they come to the lake, they ask for surprise plates – and they follow the rules!

Life Lately. . .


How is it Wednesday already? This week is flying by..  .

My friend, Peggy, was in town until early Tuesday morning and I am still smiling from an amazing few days together.

Yesterday was all about laundry, grocery shopping, meal planning, making crockpot fajitas for dinner. . . and enjoying the sunshine.
