Almond flour banana bread


So, a few weeks ago, was super awesome and sent me some almond flour. I have never baked with almond flour, so I was super excited to check it out. Add some bananas that were close to death on the counter, and banana bread with almond flour = winner.


For this recipe, I adapted from my favorite banana bread recipe.

1/2 c butter
1 c white sugar
2 eggs
1 1/2 cups mashed bananas ( about 3)
3 cups almond flour
1 t baking soda
1 t vanilla
1/2 cup chocolate chips

Preheat oven to 350 degrees. Spray baking pan with PAM baking spray.

Cream margarine and sugar until smooth. Beat in eggs, vanilla, then bananas. Add almond flour and baking soda, stirring until just combined. Add chocolate chips. You can add in chopped nuts too if you want.

Pour into prepared pan and bake for about an hour (or until a toothpick comes out clean). Remove from pan, let cool. Enjoy.


Making banana bread with almond flour makes the bread very dense and moist. So, if you are looking for a light and fluffy bread or muffin – I would recommend using regular flour!

I chuckled when I read that the bananas were near death on the counter. Whenever that happens, I peel them, piece them up, and put them into a ziploc in the freezer. They are perfect for smoothies, banana bread, and banana soft-serve!

  3. Thanks for sharing the outcome of making banana bread with almond flour. I have a sack of almond flour leftover from when I baked for a gluten-free friend a few weeks ago and I had no idea as to what to do with it! I will try making some banana bread; we usually make a loaf at least every 2-3 weeks and I haven’t made any since the holidays.

      Us too – I probably end up making banana bread every few weeks, so I like to mix it up every once in a while!
