So I was working at the hospital a few weeks ago and I walked in to see a patient. One of the nurses, Dana, asked me “did you run today?” And I said “Yup, 6 miles this morning, why?” “Because I made these amazing bars you have to try.”
And OMG she was right.
They were amazing.
My only regret. I shared my piece with Scott and Luke.
So, of course, I wasted no time, got the recipe and made them the next weekend.
There are quite a few steps for these bars. 4 layers in total. But it is 100% worth it.
Thick buttery crust. Smooth, rich cheesecake. Fresh, tart apples with cinnamon and nutmeg. Crunch from the walnuts. Topped with a streusel topping that is out of this world.
Apple Cheesecake Bars
2 cups flour
1/2 cup brown sugar
1 cup butter – softened
3 – 8oz packages cream cheese – softened
3/4 cup sugar
3 large eggs
1 1/2 t vanilla
3 granny smith apples (or any tart baking apple) – peeled, cored and finely chopped
1/2 t cinnamon
1/2 t nutmeg
2 T sugar
1/2 cup chopped walnuts
1 cup brown sugar
1 cup flour
1/2 cup oatmeal
1/2 cup butter – softened
Preheat oven to 350 degrees.
In medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender, fork or your hands until mixture is crumbly. Press evenly into a 9×13 pan sprayed with baking spray. Bake for 15 minutes or until lightly browned.
In large bowl, beat cream cheese with 3/4 cup sugar until smooth. Add eggs, 1 at a time and then vanilla. Beat until combined and smooth. Pour over warm crust.
In a small bowl, stir together apples, sugar, cinnamon, nutmeg, and walnuts. Spoon evenly over cream cheese mixture.
In another small bowl, combine all ingredients of streusel topping and sprinkle over apple layer Bake about 45 minutes or until filling is set.
Cool and enjoy.
