Friday Favorites: 7/3/15

4th of July weekend? What? No, like seriously where is the time going this summer?

Anyway. . . Happy Friday!! Anyone else starting the weekend a day early? I actually didn’t realize I had today off until Tuesday when I was reviewing my schedule for the week. Best. surprise. ever.

Cheers to a 3 day weekend!!


We don’t have anything specific planned. . . probably head up to the lake for a little bit to soak up some sunshine, take a boat ride and splash in the water.

The newest addition to my nightstand. Gah – this stuff is AMAZING. I don’t take it every night, only after particularly intense cross fit/body pump workout. 


New glasses.


I don’t love glasses. I only wear them for about 20 minutes before bed and less than 2 minutes after getting up in the morning, otherwise, it’s contacts all the time. But, I needed an updated pair.  . so, Warby Parker to the rescue. I love their at home try on program. I wasn’t expecting much, but picked out some pairs to try on at home and found a winner. Smile 



I cannot get enough lately. My favorite combo is either turkey + avocado or rotisserie chicken with homemade mayo + fresh tomato + pickles + cojack cheese – all wrapped up in a whole wheat tortilla. Summer lunch perfection. 

Living close to my sisters. My house is just down the block from the local dog park and I know Abby loves getting picked up for random outings during the day while I am at work. And I love getting pictures while I’m at work.

Friday Favorites: 8/8/14

Hey! Happy Friday. Smile

After I publish this post, I am on my way to the airport! I’m headed to Dallas, TX for AdvoCare Success School. Becky and I are meeting up at the airport in Dallas at noon and I could. not. be. more. excited. There is also a rumor that this girl will be there on Saturday, so I am super excited!

Anyway, I’ll be back on Monday with details of the weekend, but here are my Friday Favorites for ya!


**Teaching early morning BODYPUMP.


I was subbing for Chris this week and while it is SO painful to get up at 4:40AM, I feel amazing when I am done teaching class at 6:30AM. I get to watch the sunrise AND start my day with BODYPUMP!

**Tuesday night dinner date with Scott.


We don’t do this nearly enough, so it is a special treat to get a babysitter and have a quiet dinner on a weeknight. + those onion rings = amazing.

**My new favorite shirt.


I was totally on the fence about keeping this shirt, but Becky’s comment on my post telling me that I was basically a dumb bunny if I didn’t keep it, helped me make the right decision. Winking smile And now it is my go-to shirt. Over leggings on the weekend, dressed up with nice pants and a necklace for work. Love it.

**This lunch.


Toasted Ezekiel bread with TJs salted almond butter and strawberry jelly. Simple. classic. delicious.

Weekend Update: 8/4/13

Happy Sunday! Did you know that today is National Sister’s Day?  I didn’t know that until this morning, but thankfully, my little sister was already on her way to Mankato to visit for the day. . Next year, we will have to get all 3 of us together to celebrate!

But let me back up first.. . Luke and I went on a hot 5 mile run after work to kick off the weekend. ..


Caribou coffee is necessary when you have to work on Saturday morning!

Afternoon play time with the garden hose. . .


9 mile long run on Saturday evening. . .


The best thing ever after a long run. . .


Luke and I went on a nice 3.6 mile run on Sunday morning.. . followed by bodypump in the basement.


Then, the best lunch ever. Grilled cheese made with double cheese and fresh bread bought at the Farmer’s Market yesterday. Paired with Amy’s tomato soup. And you have to dunk!



Aunt Laura came to visit!!


And she brought the cutest camelbak ever – perfect for Luke with big trucks on it. And it is almost impossible to get a 15 month old to hold still for a picture while holding his new favorite thing. ..


And we went to the park to play. Luke went down the big boy slide all by himself.


And then we came home and got going on dinner.

We decided to have a Pinterest challenge dinner for #AugustPinterestChallenge.


We made Easy Summer Quinoa, Potato Chip Chicken Fingers with honey mustard dipping sauce and roasted potato coins. <—super good dinner all around.

So glad that I started this challenge to find some new favorite recipes. Smile And it was super nice to have Laura visiting and helping with dinner. And Scott was a very good dinner helper too. Really, it was a team effort. And thanks to Laura for saving this blog post by taking pictures during dinner prep. Winking smile

Such a nice weekend. Thanks for coming down to visit Laura!!

Super bummed that tomorrow is Monday, but looking forward to teaching bodypump tomorrow night. And I have some good posts (Spoiler alert – grocery challenge recap and special K bars) coming up on Running4Cupcakes this week!!  Smile

Saturday lazy eats

Happy Saturday!

We are enjoying a lazy day over here. . .


Scott is over at his brother’s house today working on a home improvement project, so Abby and I had the couch to ourselves all day! Chopped, American Idol, Biggest Loser, Project Runway All Stars, oh my!

My morning started with a fiber one bar on the way to the YMCA to teach water aerobics.


I was pleasantly surprised that my normal one piece swimsuit still fit over my growing belly. I always forget how a water workout can be so good because I really don’t teach it very often any more. . . hopefully can get back into it after the baby is born.

After class. . . a caramel skim latte (in my new mug from the husband for Christmas) and some couch/TV time.


And my new favorite snack: Justin’s maple almond nut butter with banana slices.


So delicious and so easy. . . thanks to Tina at Carrots’N’Cake for the idea. Smile 

Lunch was leftovers from this week. I made cheese stuffed meatballs that I saw on Kristin’s blog a few weeks ago, except I served mine over fettuccini.




The rest of the afternoon was doing chores around the house and enjoying the fact that I had nothing that had to do!

Teddy bear treats

Happy Thursday. . . one day closer to Friday, right?

This morning started out with waffles and syrup x 2.


Abby was very interested in breakfast. . .


Lunch was leftover hamburger with Colby cheese (and lots of ketchup) and bbq potato chips

This afternoon, Abby and I went to Petco to pick up some more puppy treats for her. Well, I guess I should say that I went to Petco this afternoon. I tried to take Abby in, but she wasn’t going anywhere near the store. It might smell like the place we take her to be groomed, which I know she hates. . . so she hung out in the car and left the treat picking to me.


Look at these cute teddy bear treats I got!


Scott and Abby are now outside planting a tree in our backyard and I am watching Jeopardy Teen tournament – which I love cause I actually know some of the answers! Smile

Last CTI

Last night I taught my last CTI class for a while. Sad smile

I am going to switch to a kettle bell class for the fall and winter schedule.

It’s nice to switch it up, but I have been teaching the Monday night CTI class for over a year now, so it was hard to say goodbye to the class and all the members that take it on a regular basis.

I did a similar class to this one.

This morning, after a quick bagel and cream cheese with blue Gatorade <—best flavor!



I had to drive to my new clinic for a provider meeting. I am starting my new job in just 2 weeks! I can’t believe that it is almost here. It was nice to meet everyone that I will be working with. It was also hard to jump into a meeting after no meetings for almost 2 months!

Lunch was leftover cheese hotdog and BBQ kettle chips from this weekend at the Lake.


Now Abby is being super cute while taking her afternoon nap. Smile 



It is super hot and humid today so happy to be inside with the AC!

Just checked my Google reader – 311 unread! Where to begin??? Well I guess I know what I am doing this afternoon!

Tzatziki sauce love

3.2 miles on elliptical + NROLW 1:A = DONE!

It felt so good to get back to the gym and workout today. After not doing any ‘formal’ exercise all weekend, it always makes me feel so much better inside and out!

Lunch = PITA PIT!


Chicken breast with lettuce, tomatoes, cucumbers and tzatziki sauce. Tzatziki sauce might be one of most favorite things ever. So delicious!


All wrapped in a fresh pita.


And a diet coke <—one of my other loves!


Paired with a fresh cucumber from our garden.


Abby loves cucumbers. She will eat them straight from the garden if we don’t watch her!

When, I bring them in the house, I give her the ends to enjoy.

The New Rules of Lifting

Happy Tuesday! Hope you had a great Monday night, like I did. . .

Started off the morning with a hot caramel skim latte – sometimes the AC is so cold! Smile 

My morning snack was awesomeness. . . toast with maple almond butter and nectarine slices! Don’t worry, the extra nectarine didn’t go to waste!


Before lunch, I headed to the YMCA to start on Stage 1 of The New Rules of Lifting for Women!

Today: Stage 1: Workout A.


I did a quick 10 minute warm-up on the elliptical and then got into it!

The workout consisted of 5 moves:

  • squats
  • pushups
  • seated row
  • step ups
  • prone jack knife

Overall it went well. I worked up a pretty good sweat and felt like my muscles were tired at the end. I wasn’t too sure of my starting weight for each move, but I felt like I was challenging myself, so I think that is the important part.

I had forgotten how much I like to lift weights. . . Body pump will still be my all time favorite!

I’ll keep you posted with how The New Rules of Lifting for Women is going!

Lunch was more leftovers: pineapple brat, red new potatoes = both with lots of ketchup, cottage cheese and watermelon chunks.



Abby was being extra cute! (and annoyed I was taking pictures!)


Not much excitement during the rest of the day. . . Scott, Abby and I went on a hot and humid 4 mile run on the Red Jacket trail after work. Lots of watermelon was consumed afterwards!

And dinner: another summer staple: corn on the cob!


It was definitely the highlight of dinner!

During dinner we watched Tangled. The super cute Disney movie – have you seen it?

Off to watch a little move TV and then head to bed! Hope you had a great Tuesday.

What screams summer to you??? For me it is watermelon and corn on the cob! Love them. Winking smile

My new fav

Happy Monday! Well. . . it is for me because I don’t have to work today! Well, not counting teaching CTI at the YMCA tonight! Winking smile 

This morning started out like most do. .. an iced caramel skim latte. yum!


A nice mid-morning bike ride = 35 minutes—> 7.1 miles.


And a walk with Abby.

Lunch was leftover plate: green been French fries, new potatoes, coleslaw, strawberries, crackers and egg white salad.



And finished with my new favorite snack/dessert = frozen fruit!


I got a huge bag of frozen fruit from Sam’s Club. I usually just use the fruit for smoothies. But last week, I was super hungry while blending up my smoothie and so I started eating the frozen fruit. delicious. Perfect on a hot summer day. Sweet, cold and sorta creamy. . . my favorite: mango and pineapple. The perfect snack or dessert!

Minneopa Falls Picnic

This afternoon, Scott and I took Abby to Minneopa State Park, which is just outside Mankato, for a picnic lunch, a game of fetch and waterfall admiring.  ..


On the way, we stopped by the bank. . . Abby and I waited in the car


Abby was very excited about her tennis ball


Lunch was crackers with turkey, cheese and cucumbers.


Also, strawberries & BBQ potato chips.

And of course, 2 cupcakes!


Before and after lunch, we played ball. . .



And then, the waterfall!

There is a smaller falls on top. . .


And the bigger falls on the bottom…


Across the bridge. . . Abby wasn’t sure if she should stay with me (and her tennis ball) or follow Scott (with the food)




It is mid-80s and humid here today! So, we were happy to get back to the car and the air condoning. . . Abby too!
