Weekend at the Lake with Magic Cookie bars {recipe}

This past weekend, we headed to the Lake for some time with friends.


We had lots of talking, laughing, swimming, and time in the boat.


I was recently sent some Eagle Brand sweetened condensed milk to try in a recipe and share on the blog.


I knew this was the perfect weekend to try my Mother in law’s recipe for magic cookie bars.


And you guys, they are SO good!


Magic Cookie Bars {recipe inspired by my MIL – Way}

1/2 cup butter (melted)
1/2 cup each: white, milk and semi sweet chocolate chips
1 1/2 cup graham cracker crumbs
1/2 cup sweetened coconut flakes
1 can (14oz) can Eagle Brand sweetened condensed milk
1 cup chopped pecans

1. Preheat oven to 350 degrees
2. In 9×13 pan, sprinkle graham cracker crumbs over melted butter, combine and pat into bottom of pan
3. Pour Eagle Brand sweetened condensed milk evenly over crust
4. Top with chocolate chips, coconut, and pecans
5. Press down gently
6. Bake for ~25 minutes until lightly browned.
7. Cool completely and serve.
8. Accept compliments. Smile 


And I already cannot wait for our Lake weekend next year!

Spring Break with the boys

Happy Monday!

I just dropped Luke off at school. Jake is snoozing in his car seat. And I am soaking in my last two days of maternity leave before going back to work on Wednesday.

We had a great week over Luke’s spring break. . .

Lots of brother time.

Trips to the library. We recently started reading chapter books together before bed and I LOVE it!

Weekending. . .

Monday! I had to work all weekend, so today is my day off. ..

I kicked it off with BODYPUMP 98 at the YMCA with Chris.


Planning to make fruit pizza, hopefully go for a run (I haven’t been able to run since the car accident because of my chest hurting!), visiting a friend who just had a baby (and taking her Tator Tot hot dish), and taking Luke to swimming lessons!

Luke and Scott had lots of fun hanging out while I was at work. ..

They went to a fire station open house.



I asked Scott to take a “belly” pic for me. . . and this is what I got:


And then I made him take this one instead. Winking smile 18 weeks!


Family walk before work on Sunday.


They made chocolate cake + a huge mess.



And we had time for a Mexican date night.


And now. . . off to tackle my to-do list!

Friday Favorites: Back from the silence!

Whew. Friday already?

Heck yes is all I have to say about that. Love short Holiday weeks! 

I also can’t believe that I haven’t blogged in for-ev-er.

I didn’t mean to take a break, but you know, life just happens sometimes! 

I turned 34 and celebrated with a night out with Scott at a fancy hotel and a super nice steak dinner at Manny’s <– SO good. 


We spent the weekend at the Lake.

I completed my goals for the long weekend . . . 

read 2 books. both excellent!


and spend time on the Lake.


We took long boat rides, jumped on the new water trampoline and it was perfect. 

And Laura made my birthday ice cream cake. holy yum!


Then, we did some work around my Mom’s house in the cities to get it ready to go on the market soon 

And celebrated my Dad’s birthday – he would have been 60! this year – with his favorite dessert – pound cake, strawberries and tons of whip cream.


Back home to laundry, grocery shopping, work and real life.

Friday Favorites: Cheesecake!

Hey there – happy Friday! 

While I am not super excited about the weekend. . . it is supposed to be cold, rainy and I have to work, there is just something about Friday that makes it better. And truth be told, I like the rain. My favorite is to sit on the couch and listen to the rain fall. It’s simple and beautiful and soothing. 

Anyway, enough weather talk, right?! 


And that means favorites. . . 

1. Survivor.

Man, I love that show and I love how each season is awesome. Spoiler alert – I cannot believe how many medical evacuations there have been this season. And I felt so bad for Joe, at 71, he was amazing. But I am not sure who I want to win! 

2. Bath time.


This kid is so funny with his stories and imagination. And while I end up being as wet as him because of splashing and playing, it is the best part of my night. 

3. How to Get Away With Murder – Season 2 on Netflix.

What? Like seriously, what? but it’s so good, I can’t stop watching. . . 

4. This book.

One of the best ones I’ve read in a while. It sucked me in from the first chapter. It would be a great summer on the beach read. 

5. This cheesecake is happening this weekend. And I cannot wait.

Want a super easy dessert that takes literally 5 minutes to mix up? So, this is a spin on the classic Philadelphia cheesecake recipe, but fits into a 9 inch pre-made graham cracker crust. If you follow the original recipe – you end up with enough for 2+ crusts.

9- inch pre-made graham cracker crust
2 pkgs cream cheese
2 eggs
1/2 cup sugar
1/4 t vanilla

Mix all together, pour into crust. Bake at 325 degrees for about 45-50 minutes. Chill in fridge for at least an hour and enjoy!

Weekending. . . Easter

I don’t even know what happened to Monday. The day just flew by! 

But I think I’m also still on a sugar high from the weekend. . . 

started with a fro yo date with the husband on Friday night. . . Luke was hanging with Grandma Mary (my Mom) and I had to work late so an after work date night with fro yo + Sam’s Club + the grocery store. #adulting


On Saturday, quick treadmill run and then we were on the road to the cities. 

First stop – Mall of America to have lunch with Scott’s family. 




And then to my Mom’s house for Easter dinner and hanging out. The highlight is always the pistachio dessert. . . which Luke decided he needed 2 pieces. Yup – he definitely is my kid! 


And then we got Luke’s Easter basket ready – new Paw Patrol shoes + socks + gardening tools + new shark bath towel + a new book 


Picked a good hiding place.


The next morning. .. looking for his Easter basket (with help and adult supervision. Winking smile




Abby was tired from all the celebrating and eating her new bone. 


Afternoon play d’oh date.


Practicing BP 97 for the launch this weekend. Whoa – holy bottom 8’s!

Spring Break 2016

Hey there! Happy Thursday!

We’ve been having a really fun time with our”staycation” over Luke’s spring break.

I thought I’d pop in today to share some pictures of the last few days. . .

We headed up to the cities to visit my Mom and sisters.


Celebrated our 10 year engagement anniversary (we got engaged on the steps of the cathedral) with a 5 mile run.


A trip to the MN Zoo.





Celebrated Scott’s birthday (early – it’s on Friday) and Laura’s birthday with my family. I made chicken parmesan. <—super old post alert, but it’s SO good!


Started the next morning with a family trip to Caribou.




And then went to the Minnesota Children’s Museum. .. which was fun, but a little bit of a disappointment – our local children’s museum is much better!


And snapped some pictures of my big little boy. . .


I cannot believe he is going to be 4 years old next month!


And now off to have more family time. Smile

Meal Inspiration via Pinterest–recent winners

I don’t know about you, but I have a TON of recipes on my Pinterest board and honestly, I get a little overwhelmed when I try to meal plan because they all look SO good. #pinterestproblems

Over the past few weeks, I’ve tried some new recipes and come away with some winners. . . and I thought I’d share them with you. Smile 

Pasta with Butternut Sauce, Spicy Sausage and Baby Spinach | Skinnytaste:

Pasta with Butternut Squash, spicy sausage and baby spinach.

This was SO good! I was concerned that the squash wouldn’t provide enough of a “sauce” for the pasta, but it was thick, rich and delicious. Perfect with Jennie-O spicy turkey sausage. Also, it made a ton of food. So, we had lunches for work for a few days = winning!

French Onion Soup au Gratin Stuffed Meatloaf - caramelized onions and cheese turn this traditional recipe into the ultimate comfort food | | gluten free:

This one took a bit longer than I would usually spend on a weeknight meal but it was a perfect Sunday night dinner. I didn’t make the sauce, but I thought the onions and cheese middle was amazing. Leftovers were great too. 

Taco Spaghetti Skillet: A Pot-Sized Pasta recipe with the flavor of tacos made in one pan using ground beef, zesty tomatoes and spaghetti, topped with sour cream:

I swapped out the spaghetti for some penne pasta and traded the sour cream for avocado. This one was a whole family dinner winner. It wasn’t too spicy, so Luke ate it up but it had great flavor with the taco seasoning and rotel so the adults loved it too. 

Honey Balsamic Chicken Breasts and Veggies - All cooked on one single pan. Easy peasy with zero clean up, and packed with so much flavor. Done and done.:

One pan honey balsamic chicken + roasted potatoes

This one gets the award for easiest to make. I prepped the chicken in the marinade the night before and diced potatoes. Then, my husband put it all in the oven 30 minutes before I got home from work. The chicken had great flavor and I don’t think you can get any easier than one pan clean up! Smile

Sweet Christmas Chex Mix {best recipe ever}

Have you done your Christmas baking yet?


Either way, you need to make this recipe!

Laura and I made a batch on Saturday and loved it so much, we made another batch on Sunday.

A coworker of mine made it and gave me a bag of it for Christmas and after Scott ate the whole bag and asked me to get the recipe three times, I knew I had to try to make it. . . and crossed my fingers that it wasn’t too difficult.

And you guys, it is SO easy. And SO yummy.

Sweet Christmas Chex Mix

1 cup brown sugar
1/2 cup butter
1/4 cup corn syrup
1/4 t baking soda
5 cups corn chex
5 cups wheat chex
8 oz craisins
8 oz honey roasted peanuts
1 bag m and m’s

Place brown sugar, butter and corn syrup in a microwave safe bowl.
Microwave for 1 minute.
Mix. Micowave for another minute.
Add baking soda. Mix.
Add in corn chex. Mix well.
Add in wheat chex. Mix again.

Lay out on paper bag or baking sheet. Let dry.

Add craisins, peanuts and m and m’s.



And enjoy. Smile

This recipe is definitely going to be a family tradition.
