Man, do I have a great recipe for you today!!
I was at the YMCA for a Friday morning BODYPUMP class, and Kristi happened to be teaching the class before me. And she had made bars to share with her class, complete with recipe cards.
And she just happened to have one leftover! She got the recipe from our local Hy-Vee store. And oh my goodness, they are ridiculous.
I was excited about them from the start because I love anything that incorporates chia seeds. Love those things!
I seriously ate the bar she gave me and later that same day! made a batch for myself.
They are so quick and easy – literally takes less than 10 minutes to put together. With the exception of chia seeds, which I understand not everyone has in their fridge, you should have all the ingredients on hand to make them. The original recipe calls for raisins but Kristi made them with chocolate chips.. . which I think just takes these bars to the next level. Since, then I have made 3 more batches. I took some to Melanie and Becky when we got together and I think Becky might spontaneously combust if I don’t get the recipe to her soon. . . they really are that good!
I have eaten them for breakfast, after-lunch snack, afternoon snack, pre-workout fuel, or an after dinner bite.
1 3/4 cup rolled oats
1/2 cup raisins or chocolate chips
1/2 cup maple syrup
1 1/2 T chia seeds
1/2 cup creamy peanut butter
Add all ingredients to a large mixing bowl.
Fold well until all the oats are soaked in nut butter and maple syrup.
Pour into a dish.
I used a 9×9 pan, the smaller the pan, the thicker the bars will be.
Chill in fridge until firm enough to slice.
Slice into squares and wrap in plastic wrap.
