Cinnamon Walnut Oat Muffins

These muffins are based on the recipe from Becky for Cinnamon Raisin Oatmeal Muffins, but I swapped the raisins (yuck!) for walnut pieces, which add a super nice crunch. I’ve made them 2 weekends in a row! These are the perfect breakfast or snack for anyone doing the Advocare challenge. But overall, a tasty muffin for anyone, anytime. I love feeding these to Luke. With only all natural ingredients and no sugar = great, healthy snack. They are a fairly dense muffin, packed with oats and bananas. . . and perfect with a smear of fresh nut butter on top.

Makes 12 muffins

Ingredients:

  • 2 ripe bananas
  • 1/3 cup peanut butter
  • 1 T cinnamon
  • 2 cups oatmeal
  • 1/3 cup walnut pieces

Directions:

1. Preheat oven to 350 degrees and place muffin liners in muffin pan.
2. In a large bowl, mash bananas with peanut butter.
3. Stir in cinnamon, oatmeal and walnut pieces.
4. Bake for ~25 minutes, until tops are slightly browned. IMG_9980
