Crockpot BBQ Ribs

Another successful crockpot challenge meal!

Crockpot BBQ Ribs

Easy. Crockpot. Cook all day. Fall off the bone. Melts in your mouth. Deliciousness.

Here is my version:

3 1/2 pounds pork loin back ribs
1/4 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, chopped
1 medium onion, sliced
1 can diet coke
1 cup barbecue sauce

Remove inner skin from ribs.
Cut ribs into 4-inch pieces. (about 4 bones each piece)
Mix brown sugar, salt, pepper, and garlic; rub mixture into ribs. (I just dumped all the ingredients over the top of the ribs on the paper from the store and then mixed it together and rubbed it into the ribs –> one less dish!)
Layer ribs and onion in crockpot.
Pour diet coke over ribs.
Cover and cook on low heat setting 8 to 10 hours or until tender.
Remove ribs from crockpot.
Drain and discard liquid.
Put ribs back in crockpot one at a time, layering with BBQ sauce to cover the ribs.
Pour any remaining sauce over ribs.
Cover and cook on low heat setting 1 hour.

Serve with extra BBQ sauce, coleslaw, and cornbread biscuits! Careful – the meat will literally fall off the bone! You will probably need to eat them with a fork. Smile
