Egg Cups with Jennie-O Turkey Breakfast Sausage

Can you believe that I have never cooked with Jennie-O turkey breakfast sausage before? Oh man, I was missing out. I love buying their ground turkey but for some reason, never picked up a package of the good stuff. As a new member of the JENNIE-O Switch Circle, they sent me a coupon to go to the store and pick up some turkey breakfast sausage. They also sent me a super sweet green silicone muffin tin.

Luke and I went to the store and picked up ingredients to make our favorite egg cups. And got to work in the kitchen. I don’t remember having to use a pizza cutter for this recipe, but Luke thought we needed one.

OMG amazing-ness came out of our new kitchen. And this was the first time Luke and I cooked together in our new house – first of many! Smile

The first batch has already disappeared. When I asked Scott for meal planning suggestions, his first one, was to request these egg cups again. Luke and I are more than happy to comply. They are on the menu for tonight. Smile

Egg Cups with Jennie-O turkey sausage

Ingredients:
2 peppers – green, red or orange – diced
1 large onion – diced
6 eggs
1 package Jennie-O mild turkey breakfast sausage
1/2 cup shredded cheese – any flavor is fine. I used shredded Mexican blend.

Directions:
1. Brown the breakfast sausage with diced onion and peppers until both are cooked thru.
2. Whisk eggs in separate bowl.
3. Spray muffin tin with non-stick baking spray.
4. Place sausage/pepper/onion mixture into muffin cups.

5. Top with whisked eggs

6. Sprinkle cheese on top.

7. Bake at 350 degrees for about 20 minutes or until eggs are set.
8. Serve and enjoy.

      Well. .. they didn’t last too long in our house, but I would think they should keep for a good couple of days if stored in an covered container in the fridge. I took them to work for lunch 2 days after I made them = delicious!

  4. These look great! I’ve used the Jennie-O turkey sausage a bunch of times before and I love it. I usually make a breakfast casserole, but I should really try those egg cups. Does the silicon muffin tin keep them from sticking? Every time I do eggs in a regular muffin tin I have to use liners or else I’ll never get it clean!

      Ahhh isn’t that the worst – I have been known to throw away muffin tins instead of cleaning. This silicone one was amazing. Cleaned up like a dream!

  5. I literally just cooked with Jennie-O turkey sausage for the first time last night. I made sausage and sweet potato hash and it was amazing! Your egg muffins look fantastic as well. I will have to give this recipe a try!

  7. I love making egg cups on Sundays and having them last throughout the week for a quick breakfast (plus, no cleanup!). To be honest, I haven’t made them in months and I have no clue why!

      I know, Kate, they are so easy – I wonder too why I don’t make them more! I love that you can add whatever veggies you have on hand too!! Great for cleaning out the fridge. 🙂
