Tonight, I made one of Scott’s favorites for dinner: Enchiladas!
I love that this is one of his favs – cause they are sooo easy to make. And are great leftovers too.
1# ground beef (I use at least 93% lean)
onion – chopped
1 pkg tortillas
3 cans enchilada sauce (I usually get a mix of hot and mild)
1 pkg Mexican cheese
Brown beef and onions in a frying pan. Drain off liquid. Add about 1/2 –3/4 can enchilada sauce and 1 cup cheese into beef/onion mixture.
Take 9×13 pan, pour rest of can onto bottom of pan.
Fill tortillas with beef/onion/sauce/cheese mixture. Roll and place in pan with seam side down.
Pour remaining can of sauce over top, add remaining cheese on top. Bake in 350 degree oven for 20-30 minutes until cheese is bubbly and enchiladas are hot.

Dinner was broccoli with a sprinkle of blue cheese and an enchilada.
All that was missing was the margarita. . .
During dinner, Abby was very interested in a squirrel climbing a tree outside in the yard.
She watched from the window for a while. . .
And then laid on the deck to watch some more. . . in the rain!
Scott and I shared some frosted sugar cookies for dessert – only 1 type of dessert and done before 8:30!
