Fruit Pizza


I think fruit pizza is one of the classic summer desserts. . . so imagine my surprise and horror to realize that the end of summer is almost here and I had not made it at all this year! I promised Scott that I would make it over Labor Day weekend (it was even on my to-do list), but we had more than enough desserts already, so I never got around to it. . . He was super bummed. Until I promised to make it the next weekend. Winking smile My version (well really my Mom’s), has a sweetened cream cheese layer over a sugar cookie base, topped with whatever fruit you love, and drizzled with a sugary perfection glaze.

To make Fruit Pizza –>

1. Use sugar cookie dough (You can make your own cookie dough, or just by pre-made) and spread on pan.


I usually use a baking sheet or jelly roll pan. You will need to use your fingers and the heel of your hand to work the dough around the pan until spread to a even layer. This is by far the worst part of the entire fruit pizza process. . . Winking smile  and bake according to package directions.  

Remember that the cookie continues to cook after you take it out of oven so do not cook until crisp. <—My Mother reminds me of this EVERYTIME I make sugar cookie anything. .. I will never ever forget that you should take sugar cookies out of the oven before they look done, otherwise, they will be over-done.
2. Top with cream cheese topping –> Topping:  a package of cream cheese, 1/3 cup sugar and 1 tsp vanilla.  Cream together.


3. Top with fruit of choice.  My favs are mandarin oranges and kiwis.


4. Spread with glaze –> Glaze:  1/2 cup sugar, 2 Tablespoons cornstarch, 3/4 cup pineapple juice (6oz can), juice of one lemon (about 3 T). Cook all together until thickened and drizzle over fruit.


And enjoy. . .Smile

  3. I really love blueberries kiwi strawberries and raspberries!!! Love fruit pizza!! For Easter I make a tart that is very similar. It has melted white chocolate added to the cream cheese layer. Super good.

      agreed!! I am always suprised by how much I like it because I am a total chocolate dessert person – and cupcakes with lots of frosting of course. 😉
