I wish. . .

I liked oatmeal. More on that in a minute.

Rewind to some highlights of yesterday.

I went to the Minnesota Academy of Family Physicians Spring Refresher.

We were at a hotel right across from the MN river. During a break, I walked out into the rain and wind to check out how high the river is right now!

After the conference, I met my friend Sue to go for a run.

Who’s ready for a cold, windy, rainy run = this girl!

We did one of my favorite runs – Summit Ave in St. Paul. There are lots of old, big, fancy houses to look at!

And Summit Ave will always have a special place in my heart, not only because it is my favorite place to run, but it is where Scott proposed!

We had gone out for the day, to celebrate Scott’s birthday. We went to the James J Hill house, which is also on Summit Ave, for a tour. After, we went to the cathedral to look around. Originally we were going to try to take a tour, but they didn’t offer tours on the weekends. As we were walking out of the cathedral, onto the front steps, overlooking the capital and downtown St. Paul,

Scott says “Katie?”
“Ya, what?”
”Can you look at my hand?”
”Why?”
”Adam (his brother) and I were goofing around in the garage this morning and I cut my hand. I thought it was ok, but now it is really hurting.”
So, I am thinking, great, now we are going to have to go to the ER to get a tetanus shot and stitches, a great was to spend a beautiful spring day.
“When was your last tetanus shot?”
”Ummm, I don’t know.”
”Well, what did you cut your hand on?”
”A metal car part.”
At this point, I had grabbed his hand and dragged him down the stairs into the sunshine, so I could get a good look at it.
He had his right hand covered in bandage over the palm. (I have no idea how I didn’t notice the bandage all afternoon!)
I am giving him a hard time about having to go to the ER, how could he be so stupid, etc.
And then, the diamond in the ring catches the sunlight as I unwrapped his hand. 
And he got down on one knee. . .
And the rest is history!

On to. . . oatmeal. Arrrg I wish I liked it! I love it in cookies and in granola but not by itself. But, I keep trying!

Chocolate covered Katie has a recipe for Cinnamon Roll baked oatmeal or boatmeal as she calls it! I decided to give it a try, if anything, it would be a good thing to put my white chocolate pb on!

It wasn’t something that changed my mind about oatmeal. Don’t get me wrong, it was good and I ate the whole thing.

I still just don’t like the texture, at least I think that is what it is. No doubt it fills me up – which I think is why I keep trying to like oatmeal, because I know how good it can be for you and how filling it is!

Oh well, I am not ready to give up on oatmeal yet, the search continues! Next up, a recipe from Kath Eats Real Food for a dough boy smoothie (pretty much overnight oats made into a smoothie).
