Hey all – hope you are having a great Wednesday!
Here are today’s eats:
Breakfast: Caramel skim latte
Snack: cottage cheese with mandarin oranges
Lunch: Salad mix with leftover rice and veggie stir fry topped with balsamic & 4 chocolate chip cookies
Snack: Kettle corn healthy popcorn & 2 dark chocolate kisses
Dinner: Egg white salad, kale chips and cherries
Snack: 2 chocolate chip cookies
Now. . . onto the good stuff! Kale chips!
In this week’s CSA share, we got KALE! I have never had kale before, but I have seen lots of people having kale chips on other blogs, so I was excited to check it out.
I cleaned the kale, removed the middle stem portion. Gave it a quick spin in the salad spinner.
Tossed with drizzle of olive oil and sea salt.
Baked at 375 for about 12 minutes until crispy.
Served with ketchup.
They were good – a little like chips, but a whole lot healthier.
On tap for tonight: The Secret Lift of the American Teenager –> totally a teenage soap opera but cute! And a late night run. . .after the sun goes down. Another 95 degree day here in Southern MN! The heat is supposed to break tonight – so cross your fingers for us.
