My sister, Jenny, came into town yesterday for a weekend visit.
First on our list: Dinner!
Scott and I took her to Neighbor’s Italian Bistro here in Mankato.
Seriously delicious, mouthwatering food.
Appetizer: Risotto balls
Unfortunate name – delicious result.
Crunch on the outside, warm and melty on the inside. The basil oil was the highlight.
Lightly fried Arborio rice stuffed with Italian sausage and fresh mozzarella, finished with roasted red pepper coulis and basil oil.
Dinner starts with fresh baked warm bread. With butter – red pepper blue cheese butter!
And salads: Mixed Green salad
Mixed greens, peaches, plums, gorgonzola, prosciutto and figs tossed in a honey poppy seed dressing
I had never had a fig before. . . kinda tasted like a fruit roll up!
The prosciutto with the cheese, fruit and dressing was the perfect mix.

And finally, the highlight of our meal: entrée! Bison Tenderloin
Grilled 8oz North American bison filet topped with gorgonzola butter, served over fresh herb Yukon gold potatoes and broccolini.
I substituted parmesan risotto for the potatoes –> best decision. So rich and creamy. And perfect with the sauce on the plate.
Also, my first time having broccolini! I liked it. Perfect compliment to the risotto.
Jenny had champagne chicken:
Roasted breast of chicken with champagne cream over chive and parmesan risotto and grilled asparagus.
And Scott had lasagna Bolognese:
Layers of fresh pasta with ricotta, mozzarella and thick Bolognese meat sauce, oven baked and served over red sauce
We also got tiramisu to go: but were too full to eat it last night. . . maybe sometime today!
It was an excellent dinner! Always a good meal.
