On Sunday, I made another attempt at the ‘perfect cupcake’. You may remember my first attempt from a few weeks ago!
This time, I used the book my sister gave me for my birthday: What’s New, Cupcake?
It has lots of cute ideas for decorating cupcakes, but in the back, it also has recipes for ‘perfect cake mix cupcakes’ and ‘almost-homemade vanilla buttercream frosting’.
I used Duncan Hines boxed yellow cake mix (because it was on sale), and followed the recipe in the book. ..
1 box cake mix
1 cup buttermilk
Vegetable oil (the amount on the box)
4 large eggs
Mix all together. Put in cupcake pan. Bake for ~20 minutes or until golden brown and toothpick comes out clean. Place on wire rack and allow to cool completely.
Then, time for frosting! Almost homemade vanilla buttercream. . .
3 sticks unsalted butter – softened
16 ounces Marshmallow fluff – I only used 14 ounces because the fluff comes in 7 oz containers
1/2 cup confectioners’ sugar
1 t vanilla
Beat butter until smooth. Add fluff and beat again until smooth. Add sugar and vanilla. Add more powdered sugar (up to 1 cup) to taste. I added about 1/2 cup more until Scott thought it was good!
Frost cupcakes with lots of frosting to make your husband happy. Bonus points if you let him lick the frosting beaters.

Decorate with fun gold sprinkles. I tried rolling the edges, it was cute. . . but lots of work!
So, I ended up tapping the top in the sugar. I think they turned out pretty cute.
But, how do they taste, right???
They were good. . . the cupcakes weren’t out of this world, but fairly moist. The frosting was interested. It really tasted like marshmallow – duh – because of how much fluff was in it! But, not enough like a true buttercream for Scott and I. But overall, still good enough to eat! I think my first attempt is better than this one, but pretty sure there is no such thing as a bad cupcake – right? But, the search for the ‘perfect’ cupcake with buttercream frosting continues!
My best friend from medical school is coming to visit this weekend with her family. I am pretty sure I will get bonus points with her 5 and 8 year old girls.
We are headed to my parent’s Lake place today for some lake and boat time.
