Happy Happy Friday! This has been an especially long week for me, so I am super ready for the weekend! And to kick off the weekend, how about some chocolate and peanut butter?
Have you ever had Special K bars? I think they are a Midwestern thing. . . I was shocked with Becky said that she had never had them! And all it took was Melanie talking about making them recently, that I knew I had to make a batch! And share the recipe, so those of you who have never experienced a Special K bar, can change that ASAP!
These bars are like rice krispie bars, peanut butter and chocolate had a love child. Seriously, is your mouth watering? Because it should be!
They have a thick, chewy, peanut buttery base that is topped with a mix of chocolate and butterscotch that is the perfect combo. And you can’t eat just one. These are a summer, at the Lake staple for my family. Hope you enjoy!
They are super quick and easy to make. The hardest part is waiting for them to cool so you can eat them!!
1 cup sugar
1 cup light Karo syrup
1 cup peanut butter
4 cups Special K cereal
1 cup chocolate chips
1 cup butterscotch chips
Bring 1 cup sugar and 1 cup Karo syrup to a boil. Add 1 cup peanut butter. Remove from heat and stir in Special K cereal. Press into a 9×13 pan that has been sprayed with baking spray. Then, melt the chocolate and butterscotch chips in the microwave in 30 second intervals until melted. Spread over bars. Let them cool, then enjoy! **Totally acceptable to put them in the fridge or freezer to speed the cooling process.
