I am so happy that I did the crockpot challenge. The original recipe and inspiration was from Design Eat Play and can be found here.
Pretty quick and easy list of ingredients and another crockpot meal –> sold! I made a few tweaks based on what I had in my pantry.
And we usually eat our tacos as salads. Over lettuce, with the meat on top, topped with cheese and sprinkled with broken taco shells. But you can eat these with just the meat or in tacos or like us, in a salad! The meat just fell apart after cooking and had a great flavor.
Scott, who usually just says “good dinner” once, actually told me 3! times while we were eating “Wow, this has really good flavor, thanks for making dinner hon.” ![]()
Here is my version:
Ingredients
Boneless pork roast (I used about 3#)
1 T garlic powder
1 can diet Dr. Pepper
1 cup salsa (store-bought)
1 can enchilada sauce (I use Old El Paso Hot)
3/4 cup brown sugar
1 T salt
Directions
Put meat in crockpot. Mix other ingredients in separate bowl and pour over meat. Cook on low 8 hours (ok for up to 10). Meat will fall apart. Shred more with forks if desired. Eat and enjoy.

This one looks amazing. I always eat my tacos in salad form while Kyle eats his in soft tortillas. It is a super easy meal to customize!
