Brinner with Krusteaz {+giveaway}

Anyone else love breakfast for dinner? Or Brinner?

Serioulsy, it’s one of my favorites.

Easy, quick, delicious, kid friendly. Winner winner breakfast dinner.

Luke is in l.o.v.e with pancakes lately. And he loves to help in the kitchen.

So, when Krusteaz approached me about doing a review of their pancake mixes for their breakfast night program, I honestly couldn’t say yes fast enough.

For Krusteaz, every Wednesday night is Breakfast Night, where the family can spend quality time together and enjoy a meal that’s easy, familiar, and delicious.

And you guys, breakfast night couldn’t be any easy than with Krusteaz products. Their mixes are complete and all you have to do is add water, mix and cook.

And thankfully, I have the perfect 3 year old helper.

My favorite Egg Cups

I love eggs for dinner.

Quick, easy, healthy.

Customizable for what I have in the fridge.

Good for re-heating for leftovers, I love taking them for lunch the next day.

My favorite egg cups are a variation of this recipe:

#1. Day old bread (I love buying day old bread from Jimmy John’s – you can get a whole loaf for $0.49!) –> cut into cubes.

#2. Sausage. Whatever you like – maple sausage, low-fat, turkey, veggie sausage. Cooked and cut up into bit sized chunks. You could also sub in bacon. Or leave it out all together.

#3. Add veggies. Whatever you have in the fridge will do. I made some last week with leftover roasted broccoli. I also like using the pepper/onion frozen veggie mix.

#4. Whisk a bunch of eggs together. Again, you can do the whole egg or egg whites. And pour over top of bread/sausage/veggie mixtures.

#5. Top with cheese. I love cream cheese – it adds a creamy texture to the egg cups. But you can use any cheese you want!

#6. Bake in 350 degree oven for about 20-30 minutes or until eggs are set and cooked thru.

3 ingredient pancakes

So, one thing I am really loving about this Advocare 24DC is that I am trying new things that I probably would have never tried before. See, I love pancakes. Perkins has the best pancakes – IMHO – both buttermilk and potato. If I am making them at home, I have to follow this recipe that uses Chobani – YUM!

But on my challenge = no flour, no sugar, no dairy.

But, I want to eat some pancakes!

I found inspiration from this recipe.  . .

And made these.

Now, don’t be fooled – they don’t taste like regular pancakes. Banana pancakes, maybe, but not fluffy Perkins buttermilk pancakes. But a great clean-eating healthy breakfast that I will be making again. *In fact, after I made them the first time, I made them again the next day – but a double batch so I would have leftovers.

3 ingredient pancakes
1 banana
2 eggs
1/4 t baking powder

Directions

Mix together –>I think the blender works the best.

Spray a pan with cooking spray. Heat over medium heat. Pour a small circle onto pan. Wait for bubbles to form. Flip. Enjoy.

I think these are amazing with a little bit of nut butter. Whoa. So good.

And you better believe there is a stash in my fridge ready for a quick breakfast anytime. IMHO – I think they taste awesome cold from the fridge.

Goal #2

So, if you have been following along, you may remember that I set the following goal for myself last week:

Katie’s Goal for this week: Eat something in addition to the caramel skim latte (CSL) for breakfast.

Breakfast!

I was actually suprised at how well it went. I was afraid that adding calories at the begining of the day would make it harder for me to stay on track for total calories throughout the day. NOPE! It actually helped! Eating a little bit more for breakfast, help me get to lunch and not be starving, so ate less at lunch. Then, because I didn’t overeat at lunch, I would be hungry for my afternoon snack, which would then get me through my workout and to dinner – again not starving! Eat a normal dinner, without my normal 2nds, and even have room for some dessert! Awesome. I ate dessert every night and still lost 2 pounds this week. By far, a banana is the easiest thing to add to my morning latte, but I am hoping to further expand my breakfast as I continue to work on this goal.

Now, week 2!

My goal for this week is to get a fitness assessment at the YMCA.

 The YMCA is really nice, they will do a full fitness assessment, including measurments, body fat/muscle analysis and a fitness eval, all for free! The problem is I have always been too embarassed to do it. .  . it’s hard to get on a scale in front of another person, no matter what your size or weight! But, I have always wanted to do it and thought it would be a good goal to do this week! Many thanks to Tina from Carrots’N’Cake for inspiring me to do this via her own ‘Lose the Dough’ challenge.

My plan will be to do it this week and then in about a month (begining of April) repeat it. I think that will be good motivation to up my workout game!

Early morning

Every morning my husband gets up about 5:30am to work out. Usually, since I am NOT a morning person, I am able to go back to sleep until about 7am when I usually get up. This morning, I couldn’t fall back asleep! So, after lying in bed for about an hour and snuggling with Abby, I got up. Whenever this happens, I have no idea what to do with my extra hour in the morning. It’s not quite enough time to work out, too early to eat breakfast, too early to go into work. . . So, I spent some time playing around with this blog and watching DVR of the Biggest Loser from last night.

 I also read some of my most recent SHAPE magazine.  There was a good quote:
