This weekend was full of TYT moments. . .

Luke took an extra long nap on Friday morning. I had lots of things on my to-do list. . . but I took the opportunity to run longer and watch more episodes of My Fair Wedding!

Saturday, I took time just to hang out on the couch and read my latest issue of Every Day with Rachel Ray magazine. <—one of my favorites!!

On Sunday, I lounged on the couch in my Green Bay Packers PJ bottoms and watched the game. . . well ok, I only watched the first quarter and then I switched to some of my DVR shows (Biggest Loser and Chopped) because without Aaron Rodgers, it was painful to watch. . .

And then I finished Sunday night with one of my all time favorite things –>

Chobani perfect pancakes. with my favorite husband. watching one of my favorite shows – Amazing Race! I am rooting for Jason and Amy!

CHO! {giveaway}

I recently had the opportunity to try out some new-to-me Chobani yogurt products.

I first tried the new Chobani Bites.

And overall, I just wasn’t a fan. They didn’t have the thick, creamy texture that normal Chobani has and I just didn’t love the flavor combinations. Fig with orange zest, caramel with pineapple chunks, raspberry with dark chocolate chips, and coffee with dark chocolate chips. Now, the boys in my house had a different opinion. Luke loved them, all the flavors. . . except coffee with dark chocolate chips, I didn’t let him eat that one. Scott liked them overall too, however, I don’t think that we will be going out of our way to buy them at the store.

Up next was the  Chobani Flip. I was warned that the texture was similar to the Bites, which it was, but a little thicker, plus the mix-ins were ah-mazing. Seriously, there was fighting in our house and paper,rock, scissor games to decide who would get to eat them!

My favorite by far was the key lime pie crumble. Just like dessert.

Perfect for an after dinner snack. Flip. Love. Winking smile The other awesome flavors I got to check out were (in my order of favorites): almond coco loco (just like an Almond Joy!), strawberry sunrise, vanilla golden crunch, raspberry choco fix, honey bee nana.

I guess you can see that we all loved the flips in this house!

I also received some 0%, 2% and vanilla Chobani. . . and you better believe I made some Perfect Chobani pancakes. Lots and lots and lots of them. Smile

I made fro yo bars that I have been eating for breakfast. Recipe was inspired by Becky. I added a few tweaks of my own too. Check out my version here!!

I also froze some yogurt. I simply spooned it into ice cube trays (just like when I made baby food for Luke), froze it, and then dumped the cubes into a large plastic Ziploc bag. Perfect for later when I am drooling over another Chobani recipe!

And nothing goes to waste in this house –> the Chobani containers are perfect for bath time!!

Fro Yo Breakfast Bars

Frozen yogurt. For breakfast. And mini chocolate chips. Yes, please! I have already made these a few times this summer. They are the perfect cool summer breakfast. I usually eat in the car on the way to work, so I am always looking for healthy, portable, and easy to make at home, like my chia peanut butter power bars and now these fro yo breakfast bars! I make them pretty thick so that they will take a while to thaw. It takes me about 15 minutes to get Luke to daycare, so in about 20 minutes, I am ready for breakfast. And they are still firm, not falling apart and the perfect consistency. I travel with them in Ziploc baggies because as they melt, they can get a bit messy, but totally doable in the car on the way to work!

Recipe inspiration was from Becky at Olives ‘n’ Wine and Lindsay at The Lean Green Bean. And the yogurt was courtesy of Chobani. Smile

And they are super easy to make. And you can customize them based on your tastes or what you have in the pantry. I basically made a hybrid between Becky and Lindsay’s recipes. . . My recipe has some extra granola, because I find that helps them stick together. And chia seeds – cause I love them! And chocolate chips. . . mini ones are so darn cute and the perfect addition of sweetness to these bars. Hope you enjoy!

Ingredients

  • 2 cups Chobani greek yogurt (I used 1 c 2% plain, 1 c vanilla)
  • 1 c chopped fruit (I used strawberries & blueberries)
  • 1 1/2 c granola (I used the store brand oats and almonds)
  • 1/4 c mini chocolate chips
  • 1/4 cup dried craisins
  • 2 T chia seeds

Instructions

  1. Mix all ingredients in a bowl.
  2. Line a pan with press ‘n seal.
  3. Spread yogurt mixture into pan.
  4. Cover with plastic wrap and place in freezer until frozen.
  5. Remove from freezer, let thaw for 5 minutes, cut into bars.
  6. Store in an Ziploc bags in the freezer
  7. Let thaw about 10-15 minutes and enjoy.

Weekend Update: Country Fest 2013

My weekend started with the most awesome package on my doorstep.  ..

Thanks Chobani!! I have already tried a couple of the flip flavors – and OMG key lime crumble is ah-mazing.

Then, we headed to the Lake, with a quick stop at YUM! for lunch.

Fest 2013!

Over 4 days we saw: Thompson Square, Miranda Lambert, Gloriana, Hunter Hayes, Montgomery Gentry, Neil McCoy, Little Big Town, Toby Keith and Jason Aldean.

In addition to the concerts, the people watching is the best!

And we got to meet Lauren Bell Bundy who is on Heart of Dixie and is a country singer too. She was super nice.

We also spent time in the lake, went to Eau Claire for the farmer’s market (picked up some lettuce and baba ghanoush and pita chips). Always good to cross something off of the summer to-do list!!

And then went to “the best gyro place ever” per Laura. Smile

And the rest of the weekend was spent on the water. Including Luke’s first boat ride. Smile

Weekend Update: 6/9/13

I dropped Luke and Abby off at my parent’s house for a few hours on Saturday afternoon. . .

A super fun get together with these ladies – Melanie and Becky! We met up at Caribou and spent 2 hours (that went by way too quickly) talking about life, blogging and everything. I am so happy that I have become “real life” friends with them!!

Then, we headed to Patisserie 46 for some of this.  . .

And to meet up with Teresa from Famiglia Meschini wines. She shared her adorable story how her family started their wine company. They make their wines in Chile and Argentina and import them here! She is also a busy Mom. She was nice enough to meet with us and share her story and info about their wines. IMG_4472

She, of course, brought some wine for us to take home! I snagged a bottle of their Torrontes Premium. Thanks Teresa!! IMG_4475

After a quick run with my Dad and Abby. I picked up Scott and we headed out for our anniversary dinner at The Bradstreet Crafthouse at The Graves Hotel in downtown Minneapolis. IMG_4479

I knew it was going to be a good meal, when the waiter brought us a pre-cocktail cocktail! Winking smile We each started with a drink, Tom Collins for Scott and a gin-fruit-thing for me. Their menu is all small plates and sandwiches so we got a bunch of different things and shared them all. The best thing was a chicken fried black cod sandwich with fresh house made pickles – yum! But we also had. . .

The chicken and waffles was super yummy and Scott loved the caprese melt. The only thing that I wanted to get that we didn’t was the Becky recommended Lobster Mac and Cheese (so, we totally need to go there together, Becky!!) And we finished the meal with vanilla crème brulee. It was a really nice anniversary dinner! And I would recommend Bradstreet to anyone who wants a good place to go hang out and have some interesting drinks and fun food.

Luke had lots of fun hanging with Grandma and Grandpa Thompson while we went to dinner.

We headed back to Mankato on Saturday night. .  .

And Luke and I went out for a 4 mile run. PJs are totally acceptable jogging stroller attire on Sunday morning, right?

Then, it rained most of the afternoon. . . which was fine by me! Snuggled on the couch, catching up on TV time and blog work during baby nap time –> perfect Sunday afternoon. ..

Weekend Update: 5/19/13

I went for a 5 mile run with Sue on Summit Ave. (one of my running favs!)

And just as we were both commenting what nice weather it was for a run, it started to sprinkle. . . then rain, then downpour. And then we turned around and realized we had been running with the wind and the rain. To say we were soaked, would be an understatement.

But we had a good run! And it was nice to catch up – I don’t think I have seen her since the Winter Carnival Half Marathon. Thanks for the run Sue!

Then, I had about an hour to kill before I had to pick Scott up from a training session he was at. . . so I took my wet self to wander around at Trader Joe’s.

You guys were right, they have some decent prices on items. But, there are impulse buys around every corner! More details coming in this weeks grocery challenge update but spoiler, I only spent $23.82. . .which I thought was a total victory based on the amount of things I wanted to get/try! BTW – has anyone had their curry sauces?

Then, an awesome dinner with my sisters at The Melting Pot in Minneapolis. Full review of our fondue dinner this week!

Saturday was filled with errands and chores around the house. And some baking! When I saw this recipe for salted caramel chocolate chip cookie bars from Taylor at Greens & Chocolate last week, I knew I had to make them this weekend!! The perfect mix of chocolate, caramel and salt.

And finished off Saturday night with some TV time and Laura painting my toenails. . . She does a much better job than I ever could. Winking smile

Sunday started with Chobani Perfect Pancakes . . .Abby is such a good helper cleaning our the yogurt containers.

Followed by an awesome BODYPUMP class – that Laura came to!

Then, more stuff around the house. Hanging out with Laura and watching Luke run around. Fro yo!

Mom and Dad came down to hang out. Dad, Abby and I went for a run. And then out to dinner.

Like usual, I am totally bummed that the weekend is over.. .  but man, it was a great weekend filled with family, food, and running. You can’t get any better than that!!

Summer smoothie dinner

After work, Scott and I took Abby for a 4 mile run. We had a little sprinkle of rain in the middle . . . and enjoyed a beautiful rainbow too!

Afterwards, I hit up my Shred DVD for a little Level 2 action. And a quick play session with Abby!

Quick shower and I was so ready for dinner.  ..  and something cool and creamy sounded perfect.

Blended strawberry chobani yogurt, frozen strawberries, and OJ. Topped with banana chips, chopped strawberries and chia seeds.

Finished dinner with a Adora calcium disc and a bowl of cinnamon toast crunch.

Now, we are hanging on the couch, entertaining ourselves with the dog. . . and catching up on the Next Food Network Star from Sunday night.

Rainy Sunny Saturday

After breakfast and some TV time on the couch. . . I headed out for one of my favorite running times: rain!

I heart running in the rain. Things are generally a little quieter, just me and the rain. And in the spring/summer it keeps away the heat and humidity!

Before the run:

There are many fun games to play in the rain:

1. Find the biggest worm

2. Avoid puddles

3. Jump in puddles

4. While looking for worms, find a snake, then spend the rest of the run worried that all worms are snakes, if you are Katie, take it a bit farther and think that anything is a snake: trees, dandelions, sticks. . . I do NOT like snakes and as soon as I see one, it is all I think about. . . when I am running with another person and I see a snake, I literally try to jump on top of them to get away from it!

5. Wonder if you need to shower after getting soaked in the rain

6. Get mad when the rain clears up and the sun comes out

It was a really nice 5 mile run. Smile 

After the run:

Here are a few things I make sure I have to go for a run in the rain:

A hat to keep the rain out of your eyes

Shoes that can get wet and soaked! Because it is seriously so much more fun to splash through puddles than to avoid them!

After I got back, the rain had cleared up, so Abby and I went out for a nice walk around the neighborhood. She found (and peed in) lots of puddles.

Then, we headed downstairs for Level 1 of Shred. Totally loving these workouts!

Lunch!

Smoothie: frozen strawberries, strawberry chobani, pineapple OJ, chia seeds. Topped with fresh blueberries.

The beauty of chia

Somebody. . . used all the milk this morning! No CSL for me.

Because of the hot weather yesterday, thankfully, a smoothie sounded really good.

Into the blender: strawberry chobani yogurt, 1 cup frozen strawberries, 1/2 cup OJ.

Topped with: 1/2 t chia seeds, 1/8 cup banana chips

It was cool and creamy and yummy! Winking smile I love how chia seeds absorb some of the water and turn into gel-like pieces. My new favorite thing.

And I love the nutritional information of chia seeds! I read this on Carrots ‘N’ Cake:

In terms of nutritional content, a tablespoon of chia is like a smoothie made from salmon, spinach, and human growth hormone. As tiny as those seeds are, they’re superpacked with omega-3s, omega-6s, protein, calcium, iron, zinc, fiber, and antioxidants. If you had to pick just one desert-island food, you wouldn’t do much better than chia, at least if you were interested in building muscle, lowering cholesterol, and reducing your risk of heart disease; after a few months on the chia diet, you could probably swim home.

I hope they help make up for my dessert last night!

Sun shower

For lunch, I tried a new flavor (to me) of Chobani: Pomegranate! It was delicious. I really liked the pieces of pomegranate seeds in it. I will be having this flavor again.

I also had a turkey and provolone sandwich with carrot and celery sticks.

A quick banana snack before our run this afternoon.

Scott, Abby and I headed out into the sunshine for a nice hour long run. My calves were pretty tight for the first half of the run, but were much better after we got hung up at a stoplight and I had a second to stretch them out. Much better. In the middle of the run, we had a sun shower for about 5 minutes, which then left a beautiful rainbow. Smile 

After we got showered up, Scott requested cereal for dinner (seriously his favorite food) so I put a salad together for my dinner.

In the mix:

  • spring mix lettuce
  • cucumbers
  • red and yellow pepper slices
  • cherry tomatoes
  • carrots
  • leftover pineapple brat pieces
  • sprinkle of mexican shredded cheese
  • BBQ potato chips sprinkled on top and a few extra on the side to eat!
  • Blue cheese dressing

After dinner, Scott asked what was for dessert and I offered to make us his and hers smoothies again. He was game. So a blueberry chobani yogurt, pineapple OJ and frozen strawberries went into the blender.

I topped mine with coconut butter, chia seeds and banana chips. Scott had chia seeds on his again too and told me 3! times how awesome his smoothie was! Winking smile

Abby, as usual, was close by during the smoothie eating and was rewarded by being able to clean out the bowl!

Is it wrong that I am looking forward to dessert tomorrow night so I can have another smoothie??? They are just so yummy lately – I think it has a lot to do with the warmer weather too!

Off to brainstorm breakfast ideas for tomorrow so I don’t have just my CSL alone again.
