Friday Favorites: Bumpin’ in Charleston

Hey hey – Happy Fri- YAY!

I have to work all weekend long but that’s totally ok, because Scott and I just got back from a long weekend in Charleston, South Carolina. I was there for a medical conference and Scott tagged along. My Mom came and watched Luke and they had so. much. fun. And Scott and I enjoyed extra sleep, good food and quality conversation and time together. It was perfect. I think I took a total of 3 pictures. . .

Checking out the harbor and watching the dolphins swim.


Food highlights include Lewis BBQ {get the brisket}, King Street Cookies {two words – s’mores cookie}, Old Village Post House {delicious steak}, Another Broken Egg {get the biscuit beignets}, 82 Queen {brunch!}.

And I can’t believe I never shared any Halloween pictures. ..




And doesn’t Halloween seem like forever ago already??

And how is Thanksgiving next week?? This pregnant lady is SO excited for Thanksgiving dinner. I’m most excited for mashed potatoes and gravy. . . and pie. . . and Jennie-O sent me another turkey to make for Thanksgiving this year.


We made it last year and it was SO good. Juicy and delicious.

And SO easy to make!


Other life stuff. . .

I just finished this book and I can’t recommend it enough. SO good!


Trying to find a diaper bag..  . I think this one might be a winner.. .


Every night in our house. Candles forever.


I totally went out of my comfort zone with grey nails. And I love them!


And this latest package from Krusteaz makes me SO excited for Holiday baking!! This baby better stay in until I have a chance to get some baking done! Winking smile


I know Luke and I are going to have some fun with these decorating edible frosting pens!


And I’m still teaching BODYPUMP twice per week and loving it. Fingers crossed that I continue to feel good and can keep teaching until the end! I picked up  these old navy maternity workout pants a few weeks ago. love the subtle design and they are super comfy.

Dinner made easy {thanks to Jennie-O}

As a member of Jennie-O switch circle, they occasionally send me products to try out. And a few weeks ago, I received a package with two ground turkey products – lean taco seasoned ground turkey and lean Italian seasoned ground turkey. It was the perfect answer to “what’s for dinner?” that week!

Up first, the lean taco seasoned ground turkey. . . into nachos.


So simple. Layer a baking sheet with doritos, sprinkle with cheese and drizzle with taco sauce. Put in 350 degree oven for about 10 minutes or until cheese is melty. Meanwhile, brown the turkey with 1/2 chopped onion. When the chips come out of the oven, top with ground turkey, and whatever you like on your nachos – I add chopped tomatoes, lettuce and sour cream.


Served on the baking sheet for minimal clean up. So stinking good and so easy!

Then, the next night,


I browned the lean Italian seasoned ground turkey and added a jar of spaghetti sauce. Served over pasta. Sprinkled with parmesan cheese. Yum!

I wasn’t sure what I would think of the Italian seasoning on the turkey. My Mom makes an amazing ground beef spaghetti sauce, and it’s hard to top that. While, my Mom still has the top spot, this was the perfect amount of seasoning and kicked up my weeknight dinner – win!


I will definitely be buying this product in the future.

Hey! Happy Wednesday. Happy Thanksgiving Eve. Wait, that isn’t a thing, is it? Well, it totally should be. And we should probably get the day off work for it. Whose with me? Because we all know that food prep starts way before Thursday anyway. . . btw – isn’t it crazy how much cooking and planning goes into one! meal. Thank goodness there are always tons of leftovers. Smile

In honor of Thanksgiving Eve, I thought I would share the typical dishes that make up my family’s Thanksgiving dinner.

1. Turkey. Duh, right. Have you guys seen the Jennie-O oven ready whole turkey? As a member of Jennie-O switch circle team, I was sent one to check out!


A whole turkey that comes all ready to go in it’s own bag. Pretty amazing. All you have to do is poke a couple of holes in the bag and put it in the oven. I’ve always been super nervous about making my own turkey and screwing it up, but I am pretty sure I could handle putting it in the oven. . .


bahahahaha – they even call the bag “The fool proof bag.” Yup, perfect for me. Winking smile

2. Mashed Potatoes and gravy. My Mom rocks these out. But doesn’t this recipe for crockpot garlic mashed potatoes look amazing?

3. Stuffing. Does your family call it stuffing or dressing? I think in mine we call it both, it depends on which recipe my Mom makes. . . My Grandma Christine’s recipe is dressing, but the other recipe Mom makes (Mark Consuelos stuffing recipe) is stuffing. Craziness. This year, we are trying something new. I am going to make this recipe.

Double score for a crockpot recipe on Thanksgiving. Fingers crossed that I don’t ruin Thanksgiving.

4. Crescent rolls.

5. Canned cranberries. That no one really eats. . .

7. PIE.


My Dad makes the best pies. His apple is amazing. Seriously, I wish I could send you a piece. .. but then there would be less for me, so I guess you’ll just have to take my word for it. Winking smile

Weekend Update: 7/6/14

Oh Monday! After a nice long 3 day weekend with my little family, it doesn’t feel so bad today. . . Smile 

Luke and I started 4th of July at Caribou for smoothies and some outside time.


Then, a trip to the pool in the afternoon.


with friends always makes it better.


trouble. seriously, we are in big trouble. He pulled the stool over, opened the fridge and climbed inside ALL BY HIMSELF. Such a monkey!


Gillin’ –> Jennie-O was nice enough to send me some turkey franks to grill up for the Holiday. And I was most excited about these Jalapeno Jack ones!!


And they did not disappoint! Full of cheese with a nice kick from the jalapenos!


poor Abby HATES fireworks. So. . . I had a lap puppy all night long. I actually really like the extra snuggles, but feel so bad that she is so scared!


Send some SPARK off to my friend, Nicole!


Trip to the Farmer’s Market. . .


BODYPUMP practice + a helper.


Getting ready for our challenge that we are starting today! . . . making homemade larabars (minus chocolate chips!) for snacks and amazeballs using chocolate protein powder  –> prefect post-workout snack!!


I also prepped chicken salad (for lunches), veggies and egg cups.


Family walk and errands.. .


Including picking up a new mattress for Luke’s big boy bed!! Side note – when did he get SO big??


Sunday morning breakfast. . .


And the rest of the day (after a 3.5 mile super humid run. . .) was spent helping Luke “help” Dad with the pantry shelves. .. doesn’t it look awesome??


Ice cream date at DQ –> OMG the s’mores blizzard is still ah-mazing. Smile 


And the rest of the night was bedtime, laundry and getting all my Advocare stuff ready for Scott and I to start our 10 day challenge tomorrow!!

Friday Favorites: 6/27/14

This weekend, my sister and I are headed to our 8th annual Country Fest!!


Fingers crossed that we get to do some awesome people watching like last year!

Here are the things that made me smile this week. . .

–> Luke’s first baseball game. ..


so he was actually more interested than climbing up and down on the chairs, but it was still fun!

–> Shelves in our master bedroom closet = amazing.


My husband is awesome- love that he is able to do these projects for us around the house!!

–> Chocolate chip cookie dough bites. Seriously, make these this weekend.


–> Wonderful deliveries from Jennie-O. I cannot wait to fire up the grill and try these turkey franks – and jalapeno jack?! yes!!


–> These little containers. Perfect for a single serving of nuts or a travel pack for nut butter. I have at least one in my work bag every day!

Friday Favorites: 5/23/14

woo hoo for Friday, long weekend and my birthday weekend!! Smile

We are headed to the Lake for the first time this summer. And it’s my birthday on Monday. So, it’s going to be a good one! I am off to pack and get ready to go, but here are the things that made me smile this week. . .


1. Drive thru Caribou –> just opened up right down the road from me. Seriously, dangerous. Thankfully, now with Advocare, it’s not an every day occurrence, but a great mid-week treat!


2. The fact that this picture from last weekend is my screen saver.


3. The saying on the top of the Advocare Spark containers.


It just makes me smile and feel good about what I am putting in my body to start the day. And I just cannot even put into words, how amazing it makes me feel. #truth #lovespark

And my Spark shelf makes me smile too!


4. My boys in matching polos.


5. Jennie-O taco seasoned ground turkey

6. Surprise visit in the middle of the day to visit Luke. I had an unexpected break in my day on Thursday, so I took full advantage of the extra time and sunshine and went to see Luke! It made my day. Smile

Jennie-O Taco Seasoned Ground Turkey–{recipe + giveaway}

In honor of Cinco de Mayo and as part of the Jennie-O Switch Circle team, Jennie-O was amazing and sent this awesome package to help celebrate.


We had just had tacos for Luke’s birthday party that weekend, so I put the turkey taco meat into the freezer for a later time.

And I am so glad I pulled it out this weekend.


We were in the cities all day on Sunday and by the time we got home, I just wanted something quick and easy and healthy for dinner.

Enter Jennie-O taco turkey meat + salsa verde + wholly guacamole = yum.


I served everything over lettuce. And Scott and I made build your own taco salads.


On mine: lettuce, taco turkey meat, salsa verde, wholly guacamole, and a sprinkle of cheese. (+ for being Advocare friendly!)


On Scott’s: the same + more cheese, sour cream, taco sauce and crushed up tortilla chips.


The Jennie-O turkey meat was flavorful and delicious. And the fact that the meat was already taco-seasoned, just one less step between me and dinner. I loved how quickly this entire meal came together! I will definitely be picking up Jennie-O taco seasoned ground turkey again for a quick, easy, healthy dinner!

We even ate leftovers the next night – this time in taco form.

Mine with corn tortillas, guacamole and salsa verde.


Scott’s with flour tortilla, sour cream, cheese, and taco sauce.



And then I ate it again for lunch at work the next day. 3 days in a row! Seriously, can’t get enough. So good. Smile

Egg Cups with Jennie-O Turkey Breakfast Sausage


Can you believe that I have never cooked with Jennie-O turkey breakfast sausage before? Oh man, I was missing out. I love buying their ground turkey but for some reason, never picked up a package of the good stuff. As a new member of the JENNIE-O Switch Circle, they sent me a coupon to go to the store and pick up some turkey breakfast sausage. They also sent me a super sweet green silicone muffin tin.

Luke and I went to the store and picked up ingredients to make our favorite egg cups. And got to work in the kitchen. I don’t remember having to use a pizza cutter for this recipe, but Luke thought we needed one.


OMG amazing-ness came out of our new kitchen. And this was the first time Luke and I cooked together in our new house – first of many! Smile 


The first batch has already disappeared. When I asked Scott for meal planning suggestions, his first one, was to request these egg cups again. Luke and I are more than happy to comply. They are on the menu for tonight. Smile

Egg Cups with Jennie-O turkey sausage

2 peppers – green, red or orange – diced
1 large onion – diced
6 eggs
1 package Jennie-O mild turkey breakfast sausage
1/2 cup shredded cheese – any flavor is fine. I used shredded Mexican blend.

1. Brown the breakfast sausage with diced onion and peppers until both are cooked thru.
2. Whisk eggs in separate bowl.
3. Spray muffin tin with non-stick baking spray.
4. Place sausage/pepper/onion mixture into muffin cups.

5. Top with whisked eggs

6. Sprinkle cheese on top.

7. Bake at 350 degrees for about 20 minutes or until eggs are set.
8. Serve and enjoy.
