OMG it is like 90 degrees here in MN today. We totally skipped Spring and went right into hot humid Summer!



Our run was so hard! We were both dripping in sweat after a mile and Abby’s tongue was super long! We dropped her off at home (you know, so she wouldn’t die) after about 1 1/2 miles and then did another loop around for a total of 3 miles.


I was pretty tuckered out after our run, but wanted to do another day of Jillian’s 30 Day Shred. I did level 1 again. I like the DVD. It gets you sweaty pretty quickly and it is challenging. You do 6 minutes of strength moves, 2 minutes cardio and 1 minute ab work in each circuit; 3 circuits in each workouts. I am looking forward to checking out level 2 and 3 later this week. Jillian promised to get me ‘shredded’ if I keep up with the DVD! Smile I’ll let you know how it goes.


Breakfast: CSL and fiber one oats and chocolate bar

Lunch: Salad with lettuce, carrots, broccoli, cauliflower, tomatoes, radish, turkey chunks, spoonful of macaroni salad, and ranch dressing. And a small banana. And a piece of salt water taffy a co-worker brought back from Maine!

Snack: Kashi granola bar

Dinner: Stuffed chicken breasts: I picked up 2 from Hy-Vee this weekend, one stuffed with pineapple and Canadian bacon, the other with mozzarella cheese and pepperoni. Paired with roasted cauliflower and broccoli and garlic toast (made again with Dakota bread from Great Harvest)



Now, Scott keeps asking what’s for dessert, so I better go pay attention to him! Also, time for more Greek! Totally loving that show – don’t judge! Winking smile Have a great night.

Breakfast: Caribou medium caramel skim latte and kashi granola bar

Lunch: Turkey and provolone sandwich, carrot and celery sticks, baked sour cream and onion chips

Snack: Kashi granola bar

Dinner: 4 cheese ravioli with spaghetti meat sauce and salad (lettuce, tomato, cucumber, sprinkle of cheese, balsamic vinegar) and garlic toast (featuring Dakota bread from Great Harvest!)

Dessert: Leftover pistachio dessert from ‘Easter’ dinner

Run up and down bosu ball
Squat hold on bosu with bicep curl
Bridge with feet on bosu
Plank alternating hands/elbows on bosu

Circuit 2
Up and over bosu
Jump up and down on bosu
Lunges with front leg on bosu
Standing on bosu ball – upright row and overhead press
Back extensions

Circuit 3
Charleston on bosu
Step off side to side and tap floor
Triceps extension behind back with weight bar
Side crunches on bosu
Pushups on weight bar on bosu

My first Lara Bar

Monday again. . . How’d that happen?

To make it a little more manageable, I stopped at Caribou for my caramel skim latte this morning.


It helped!


I got some Asian inspired soup from the hospital cafeteria – not good! So, I instead I had a cheese stick, Chobani peach yogurt, and my FIRST Larabar!

I wasn’t sure what to expect. I don’t know if I really like dates, but I know I like cashews (the only two ingredients). I was pleasantly surprised! It was good. A little lacking in flavor, tasted like mild cashews. But, I think I would have it again. The only thing I don’t love about it, is the calories – about 220. A little high for a snack, especially because the bar is on the smaller size. Even though it was a smaller lunch, it definitely kept me full until my snack before CTI.

Snack: Kashi granola bar

CTI – Cardio Tone Interval

Mat, weights (I used 8#s), stability ball

Circuit 1
Mummy kicks (forward kicks with arms extending forward alternating)
Mountain Climbers on floor
Squat with upright row
Ab crunch with weights, crunch weights to knees (knees at 90 degrees to ground), then extend weights overhead as you extend one leg out toward the ground
Pushups with feet on stability ball

Circuit 2
Jump rope, alternating 1 foot with 2 feet
Reverse lunge with front kick
Lay on stability ball with shoulder blades on ball, put weights on hips, lower and raise hips from floor to ceiling
Side tricep pushup
Standard crunch on stability ball

Circuit 3
Shuffle side to side with oblique twist holding ball
Wall sit with bicep curl
Squat position, holding ball, tap ball on floor and reach to ceiling
Kneel with one knee on ball, hands flat on floor, extend other leg towards ceiling, swap and do other side
Superman banana – lay on back and reach arms/legs up, hold x3 sec, turn over onto tummy, hold arms/legs up x3 sec, turn over and repeat

The BEST part of my day. . . .

After I was done with class, one of the members came up to me and said that she had a present for me. I had no idea what she could have brought me! Then, she handed me this shirt.

It is from Caribou! Her son used to work at Caribou and last week during our warm up, I told her that I liked the Caribou shirt she was wearing. She said that she had been cleaning out her closet and found this shirt and thought I might like to have it. I said of course! And gave her a BIG hug. What a nice thing for her to do!

Abby was helping with the pictures!


After a quick shower, dinner came together quickly thanks to leftovers from last night.

A salad containing:

  • arugula
  • butter lettuce
  • grapes
  • celery
  • carrots
  • blue cheese crumbles
  • pineapple brat
  • light honey french dressing


On tap for tonight: White Chocolate Raspberry cheesecake from last night and Greek. . . we just found it on the Netflix DVR and are going to check it out. My little sister says it is addicting!

Saturday Highlights

Saturday went by way to fast! Part of that was having to work most of the day. . .

Here are some of the highlights:

Breakfast: CSL, banana and Kashi granola bar


Abby enjoyed the sunshine from the deck.


Lunch: Chobani vanilla yogurt, granola, blueberries, peach slices.



Abby helped with clean-up!

Enjoyed in the sunshine. Made it very hard to go back to work for the afternoon!

Also had 2 slices of pb toast with Jif Smooth PB. Abby wanted some too!


After work, Abby, Scott and I went out to enjoy the sunshine and 52 degree weather = 5 miles!

Dinner: Leftover pizza (sausage and pineapple), salad with lettuce, carrots, celery, mozzarella cheese, mango peach salsa with a dollop of sour cream.


Highlight of my Saturday! Cold Stone Cake batter shake. It seriously tastes like you are drinking cake. Awesome.


Started with my caramel skim latte.

Abby was interested in my breakfast and also any space that might be available for her on the couch.

I also had a ‘barley bowl’. I put 1/4 cup of barley in the fridge last night covered with a little milk. This morning, I mixed it with blueberries, peach slices, and granola. Super yummy and filling.

Now, off to catch up on my Google Reader, peruse the Target Ad online, and catch up on the ‘results show’ of American Idol – 2 people are going home!

Couch hogging

Couch snuggling from last night.


Just as I was trying to take this picture, Scott moved! So, instead of getting a good view of Abby hogging one whole end of the couch with the pillow, I got this!


Play time this morning!

Caribou caramel skim latte made this morning possible! I got to work early to catch up on my paperwork and had some extra time to catch up on my Google reader!


Lunch was really spicy tortilla soup, a small Caesar salad and string cheese.

I also had a Kashi granola bar – my new favorite!


I had a few minutes to run home after lunch before starting clinic. . . It was really hard to leave again!

Looking forward to a run after work today. The thermometer says 50 degrees outside with bright sunshine – my kind of weather! Smile

Taco Chicken

At least someone enjoyed my oatmeal from this morning!



After thinking about it, here are the toppings I think would be good in ‘my’ oatmeal:

  • banana chips
  • walnuts/pecans
  • honey roasted almonds
  • dark chocolate peanut butter – I have also heard they have white chocolate pb!
  • dried fruit

So, the oatmeal experiments will continue – stay tuned!


Lunch was quick. I grabbed a cup of soup from the hospital cafeteria – Italian wedding. One of their good ones.

I was still hungry, so I tried a bite of this bar,


no good.

So, I made up for it with this Kashi bar. Love the whole almonds!


I also had an Adora chocolate calcium. So good –> chocolate and calcium!


When I got home from work today, it was 41 degrees and sunny. The nicest weather we have had so far this spring. Both Scott and Abby wanted to go for my run with me.

We ran around Minnesota State University campus (which I LOVE because all the college girls ‘awwww’ at how cute Abby is!) for about 4 miles.

Because of all the spring puddles, Abby got a quick rinse before being allowed back in the house!


Super easy, yummy recipe!

Taco chicken

All you need is a packet of taco seasoning

and about 1# chicken breasts

Slice the chicken breasts into thick slices – about 3 slices per breast.

Put in a big ziploc bag with taco seasoning and shake to coat.


Put in baking pan. Bake at 350 degrees for about 30 minutes.


Serve with sour cream.


We also had some tortilla chips with the best mango peach salsa from HyVee!

Quick, easy, good dinner! Smile 

Off to snuggle on the couch. . . I see some ice cream in my future. See ya tomorrow!!!

Normal Friday


My usual caramel skim latte and a banana (+1 fruit!).


The hospital cafeteria had nothing to eat today. No good pre-made salads or sandwiches. My go-to grilled chicken breast was a 5 minute wait – and I was already running late! The salad bar was turned into a taco bar. It was terrible. I think I was able to make the best of it. . . I used the taco bar to have some lettuce, pico de gallo, salsa, pickles, guacamole and a few tortilla chips. (+1 veggie)

The highlight of my lunch was this Kashi bar.


Whole almonds and whole grains – awesome!

I had a quick snack of 2 clementines after work to tide me over through my run. (+1 fruit)


Ran 5 miles. Still slightly chilly at 34 degrees with a wind!

But beautiful skis helped. Smile 


The snow is melting!!!



Dinner was leftovers from Wednesday nights Let’s Dish.

I substituted the pasta sauce though, because the sauce from Wednesday night had mushrooms in it. yuck!

Added some cooked carrots because they sounded good. (+1 veggie)


Ravioli + pasta sauce + corn + parmesan cheese = Dinner!

Now off to snuggle on the couch with one of my honey bunnies

– the other one will be home on Sunday! Smile 

So, Friday was pretty normal for me. . .nothing exciting. Hopefully more fun things to come this weekend.
