Weekending. . .

Happy Monday!

Today is my first day alone with the boys!

Sunday morning started with a quick run and BODYPUMP 100. I am in love with the triceps, biceps and lunge tracks. I cannot wait to get back to teaching to teach it!

It was a great weekend with my little family!

Wish me luck for the rest of my first day at home with the boys! Goals for the day include running during nap time, taking a shower, and tummy time. Smile

Friday Favorites: Bumpin’ in Charleston

Hey hey – Happy Fri- YAY!

I have to work all weekend long but that’s totally ok, because Scott and I just got back from a long weekend in Charleston, South Carolina. I was there for a medical conference and Scott tagged along. My Mom came and watched Luke and they had so. much. fun. And Scott and I enjoyed extra sleep, good food and quality conversation and time together. It was perfect. I think I took a total of 3 pictures. . .

And how is Thanksgiving next week?? This pregnant lady is SO excited for Thanksgiving dinner. I’m most excited for mashed potatoes and gravy. . . and pie. . . and Jennie-O sent me another turkey to make for Thanksgiving this year.

And I’m still teaching BODYPUMP twice per week and loving it. Fingers crossed that I continue to feel good and can keep teaching until the end! I picked up  these old navy maternity workout pants a few weeks ago. love the subtle design and they are super comfy.

Holiday Cookies with Krusteaz {+giveaway}

Anyone else super behind on their holiday baking? I cannot believe that Christmas is NEXT WEEK? What the why??

Thankfully, I have a cookie baking date with my sister, Laura, for this weekend. We will make the family favorites – sugar cookies, star cookies, and hopefully a few new ones to try.

I know you guys have heard me talk about my love for Krusteaz cookie mixes before. . . LOVE them. Seriously. They are SO easy to make (stick of butter + an egg), Luke loves to help, and they taste delicious.

I’m also planning on using the butter vanilla sugar mix to make a Holiday inspired version of my sugar cookie bars.

Brinner with Krusteaz {+giveaway}

Anyone else love breakfast for dinner? Or Brinner?

Serioulsy, it’s one of my favorites.

Friday Favorites {currently}

Hi! Happy Friday. Smile We made it. Fist bump.
I am headed to Minnesota today. I have some things to do for work, then the weekend! Teaching BODYPUMP, family time and a little bit of work on Sunday. Should be a good weekend!
I’m switching it up a bit this Friday and sharing a little snapshot of what life is currently like in the R4C house. . . enjoy and feel free to share your “currently. . .”

can’t stop, won’t stop watching Prison Break.

However, Survivor started again this week and that is probably my all time favorite show.

Current Excitement:

Getting ready to go to Vegas in 2 weeks with my husband and my sister, Laura!!

Current Exercise:

Still keeping it real with teaching BODYPUMP 1-2 times per week and running 4-5 times per week.

Current Song:

I am working on learning the choreography for some older BODYPUMP releases and I am loving the squat track song in 64 – “More than a Feeling”

Living apart from Scott and having to single parent a three year old. It is HARD. Thankfully – it’s going to be over in less than a month!

Still loving these shorts from lulu + a sweatshirt. because fall in MN means trying to wear shorts for as long as possible but staying warm at the same time.

I made this stir fry this week and forgot how delicious and easy it is. And perfect for leftovers for the rest of the week.

Spark. Fruit punch in the morning. Grape in the afternoon. Orange during workouts. I might have a problem. Winking smile

Laura made carmelitas this week and left a container of them for me. They were SO good.

Cookie time with Krusteaz {+giveaway}

This weekend at the Lake, Luke and I got busy in the kitchen thanks to Krusteaz. They were nice enough to send me some of their new cookie mixes.

And OMG. So easy and so good. And perfect for my little helper in the kitchen.

Luke is at this super fun age (3 1/2) where he wants to help and he is starting to be able to really help with mixing and measuring without making a huge mess. . . I mean, we still make a mess, but at least both of us don’t need to shower after a batch of cookies. . .

So, we picked out two flavors to try – triple chocolate chunk and brown sugar oatmeal. Spoiler alert – both delicious.

All you do is add a stick of softened butter and an egg to the mix. Mix all together. And bake.

It took Luke and I about 15 minutes to get the mixes all put together. *If I was working alone, it would probably be about 5 minutes.

And eat.

Friday Favorites: FRI-YAY

Happy Friday!! 

After the first part of this week flew by, it slowed to a halt on Thursday – but thankfully, it is FRI-YAY. And coming up to a three day weekend.

Happy dance. Smile

1. Eskimo kisses. I also love that Luke asks for an Eskimo kiss and then a “real” kiss too. Melt.

2. My job. It makes me smile. I like helping people and making them feel better. It’s pretty awesome. Smile

3. AdvoCare + Netflix for helping my running this week. I am loving the SLAM + Catalyst combo about 15-20 minutes before my run. It makes it easier to run harder and faster and get my sweat on!

4. BODYPUMP 95. It’s here! I’ve only just listened to the music. . . some good songs and some that I know won’t be favs (fellow instructors – already not loving the techno on the lunge track. . ..) And I cannot wait to try it out this weekend!

5. Prison Break. I must have been living under a rock because how am I just watching this now. It  is so addicting. And so good. Check it out but be prepared to spend your entire Saturday watching it! Smile

We are headed up to the Lake on Saturday after I teach BODYPUMP and I am looking forward to soaking in one last weekend hanging out on the dock and puttering around the lake in the boat.

I also just got my first delivery of Blue Apron and I am super excited to try it out! Don’t worry, I’ll be back with a recap and my thoughts. Smile 

Oh, and I have some cookies to make (thanks to Krusteaz). Luke and I will be busy! The tough part will be deciding which ones to make first. . .

Breakfast Night

Breakfast for dinner is one of my favorites.

It tends to be quick, easy, delicious and a family winner.

When Krusteaz contacted me to participate in #BreakfastNight, I was all in. And they hooked me up with some great mixes.

Friday Favorites: 10/3/14 + {Krusteaz giveaway!}

Happy Friday!! I am SO excited for ANOTHER! weekend with nothing planned. Looking forward to play time with Luke, couch time with Scott (he’s been out of town since Wednesday morning) and maybe a trip to the apple orchard <—didn’t happen last weekend!

Thursday morning coffee. Even though it’s one of the reasons I am doing the challenge, I still love it. Caribou caramel skim latte FTW.

Easy dinners. –> I was recently sent some of the new Krusteaz Flatbread mixes to try out. Sunday afternoon during football seemed like a great time. I love bruschetta anything, so I decided to make my own spin on bruschetta flatbread.

I’m super nervous about anything with yeast, so I wasn’t too sure what to think of the yeast packet. . .

But making the dough couldn’t be any easier. Mix the yeast, water, oil and flatbread mix all together until it forms a ball.

Let rest in a warm place, covered, to allow the yeast to activate.

While I was waiting, I gathered my bruschetta ingredients: 1 can diced tomatoes

And cheese.

I don’t think you can get any simpler than that, right?

Any cheese is fine. .. literally whatever you have in the fridge. So I happened to have leftover pizza mozzarella cheese, Colby Monterrey jack and parmesan. Delicious.

Anyone else snack on parmesan cheese while cooking?

Spread dough out on pan. Bake until golden brown. Then, top with bruschetta mix and broil on high for about 3-4 minutes until cheese is melty and hot.
