Happy Friday!! I am SO excited for ANOTHER! weekend with nothing planned. Looking forward to play time with Luke, couch time with Scott (he’s been out of town since Wednesday morning) and maybe a trip to the apple orchard <—didn’t happen last weekend!

Candle weather. . .

Beautiful fall running weather. <love> 64 degree perfection.
Thursday morning coffee. Even though it’s one of the reasons I am doing the challenge, I still love it. Caribou caramel skim latte FTW.
Easy dinners. –> I was recently sent some of the new Krusteaz Flatbread mixes to try out. Sunday afternoon during football seemed like a great time. I love bruschetta anything, so I decided to make my own spin on bruschetta flatbread.
I’m super nervous about anything with yeast, so I wasn’t too sure what to think of the yeast packet. . .
But making the dough couldn’t be any easier. Mix the yeast, water, oil and flatbread mix all together until it forms a ball.
Let rest in a warm place, covered, to allow the yeast to activate.
While I was waiting, I gathered my bruschetta ingredients: 1 can diced tomatoes
I don’t think you can get any simpler than that, right?
Any cheese is fine. .. literally whatever you have in the fridge. So I happened to have leftover pizza mozzarella cheese, Colby Monterrey jack and parmesan. Delicious.
Anyone else snack on parmesan cheese while cooking?
Spread dough out on pan. Bake until golden brown. Then, top with bruschetta mix and broil on high for about 3-4 minutes until cheese is melty and hot.
And of course I had my helper. How adorable in that apron?
Sunday afternoon perfection. Best when enjoyed during a Packer game.
