Trail Mix

I love trail mix. It is the perfect afternoon snack, pre-run fuel, car road trip travel buddy, dessert… anytime!! While I love the convenience of pre-bought selections at the store, and you all know about my love for the Target trail mix selection, trail mix is so easy to make and way cheaper if you put it together yourself.

Here is a list of ingredients to start from and how you put them together is up to you!!

  • banana chips
  • dried fruit – raisins, craisins, apricots, cherries, mangos, etc.
  • something chocolate – M and M’s, espresso beans, fruit, mini chocolate chips
  • nuts – peanuts, cashews, almonds, walnuts
  • yogurt covered raisins or fruit or nuts
  • cereal – kix, cherrios

You want a balance between sweet and salty, chocolate and plain, crunchy and chewy. The possibilities are endless!

Some of my favorite combos:

The Classic—> peanuts, M and M’s, and raisins

Coffee lovers –> chocolate covered espresso beans, almonds, dried apricots

Go Bananas –> banana chips, mini chocolate chips, walnuts, dried cherries

Halloween mix –> candy corn, M and M’s, peanuts

And remember if you don’t have time to make your own, there is always the awesome selection at Target! Winking smile

I am a little late to the Liebster party so I decided just to answer the awesome questions that Stephanie came up with for me to answer. . . feel free to pick 1 or 2 to answer in the comments section so I can learn more about you too! 1. What is your favorite breakfast food? I have the same thing for breakfast pretty much every morning – a caramel skim latte (from Caribou if I am lucky!) and a LUNA white chocolate macadamia nut bar

2. Where would you travel on a dream vacation? New Zealand –> I think we might go there for our 10 year anniversary!

3. How many concerts have you been to? Which was your favorite? Every year, my sister and I go to Country Fest in Wisconsin – it is like 16 concerts in one weekend. It. is. awesome. This will be our 7th year!


4. Where were you born? St. Paul, MN

5. What is your all-time favorite movie, book, and/or song? Tough question! Off the top of my head: Pretty Woman, Hunger Games – book 1, and anything Brad Paisley.

6. Do you embarrass easily? Most embarrassing moment? Hmmm I don’t think I embarrass too easily but I plead the 5th on the second part of this question!

7. Did you go to college? Where? What did you study? I went to undergrad at University of Wisconsin – Eau Claire and I studied molecular biology and biochemistry with a minor in Spanish.

8. Do you have pets? What kind(s)? Duh- Abby!


9. What is your favorite ice cream flavor? Chocolate.

10. If you could only go to one store for the rest of your life which one would you choose? Target. I. love. that. store. Especially Super Target. And it’s a MN company!

11. How often during the day do you check your email? Too many.

5 Things Friday: Shopping

Happy Friday!!! It was a short week but I am still super excited for the weekend.

This week for 5 Things Friday: Shopping. . . my top 5 places to shop.

1. Target

especially if it is a Super Target <– OMG best place ever. . . groceries and shampoo and clothes and dog food –> yes please! 🙂 I loved when I lived in West Des Moines during medical school because I was literally walking distance from the Super Target. Now, in Mankato, all we have is a regular Target (tear. . .) but it is still the best place to shop, wander and spend money on random and needed things. My most recent trip to Target: 2 new beach towels (pink for me, blue for Scott), salad spinner (can’t believe I haven’t bought one before now, best thing ever!), LUNA bars, card for a friend who just had a baby, shampoo, Mr. Clean Magic Eraser, gummy fiber chews, and dog treats. What other store can you get all that stuff at??? 🙂 Glorious!

2. Ann Taylor Loft – perfect mix of work clothes and casual clothes and for a good price.

3. Banana Republic – also a good mix of clothing options and I have a BR credit card = rewards = more clothes!

4. Byerly’s

an awesome grocery store in MN, unfortunately, we don’t have any in Mankato. We have to drive 90 minutes to the cities. They have lots of speciality products: breads, cheeses, meats, etc. And the most awesomeness (yes, totally a word) bakery counter. Filled with tarts, cheesecake, cakes, doughnuts, cookies, and of course cupcakes!!!

5. Porsche dealership – ok, not really but a girl can dream right???

Extra happy Monday

Happy Monday! It is an extra happy Monday because of the holiday! Smile 


Scott and I spent the morning on the couch with Abby. I enjoyed my caramel skim latte and some cinnamon toast crunch. I also got to look at a ‘real’ copy of the Target ad! I heart Target and love looking at the weekly ad. Scott got a Sunday paper yesterday, so I got to peruse the weekly ad today.




Before lunch, I did Shred Level 3 – whoa – tough! My heart was pumping!

Lunch was Amy’s tomato soup. The best tomato soup – good flavor with chunks of tomato!


Scott made us a turkey, cheese and cracker plate too.


After lunch, my sweet tooth was acting up, so I decided to make a quick batch of flourless oatmeal pb cookies. This time I made one batch with dark chocolate dreams and one with white chocolate wonderful. I am not usually one for eating warm cookies, but these are delicious right out of the oven. Totally hit my pb, chocolate, and cookie cravings! Scott doesn’t usually like peanut butter cookies. . . but he loves these ones!





It is hot and humid here today – 86 degrees! We were supposed to have some thunderstorms today, but none yet.

We went for a very sweaty run. . . Abby was tuckered out afterward!





Dinner was something to cool us down. . . smoothies!

In the mix tonight: vanilla chobani yogurt, frozen fruit mix (strawberries, mango, pineapple, and peaches), and pineapple OJ.


Topped with: chia seeds, coconut butter, granola


Finished dinner with Dakota bread from Great Harvest. Perfect dinner for a hot ‘summer’ night.


Off to watch some TV with Scott and Abby. . . and probably eat more cookies! Winking smile Have a great night! Hope you had a great Memorial Day.

Saturday Highlights

Saturday went by way to fast! Part of that was having to work most of the day. . .

Here are some of the highlights:

Breakfast: CSL, banana and Kashi granola bar


Abby enjoyed the sunshine from the deck.


Lunch: Chobani vanilla yogurt, granola, blueberries, peach slices.



Abby helped with clean-up!

Enjoyed in the sunshine. Made it very hard to go back to work for the afternoon!

Also had 2 slices of pb toast with Jif Smooth PB. Abby wanted some too!


After work, Abby, Scott and I went out to enjoy the sunshine and 52 degree weather = 5 miles!

Dinner: Leftover pizza (sausage and pineapple), salad with lettuce, carrots, celery, mozzarella cheese, mango peach salsa with a dollop of sour cream.


Highlight of my Saturday! Cold Stone Cake batter shake. It seriously tastes like you are drinking cake. Awesome.


Started with my caramel skim latte.

Abby was interested in my breakfast and also any space that might be available for her on the couch.

I also had a ‘barley bowl’. I put 1/4 cup of barley in the fridge last night covered with a little milk. This morning, I mixed it with blueberries, peach slices, and granola. Super yummy and filling.

Now, off to catch up on my Google Reader, peruse the Target Ad online, and catch up on the ‘results show’ of American Idol – 2 people are going home!

What do you stay awake for?

What a great question!

Here are some of the things I stay awake for:

  • Caribou coffee (duh!)
  • Abby
  • Scott
  • Running
  • Survivor, Amazing Race, Top Chef, Project Runway
  • Snuggling
  • Dessert

What a great Sunday morning! Hit up the Caribou in town, found a table with an outlet close by – score! Caught up on my blog reading (check out my favorites page for my daily reads), bought some Adora Calcium Chocolates, perused the Target Ad online, and spent some time blogging. All while enjoying my Caribou caramel skim latte.

Off to hit up the gym. Have a good awesome Sunday!
