TYT #11–Freezer Meals Update

So remember how Laura and I got together a few months ago and made a bunch of freezer meals?

I promised that I would report back about how they survived freezing, thawing and cooking. ..

I did one update for cheesy chicken chalupas and pizza casserole. And another one for crockpot chicken fajitas and chicken cacciatore.

I thawed this one in the fridge and then threw it in the crockpot. Overall, super easy to prepare – you can’t beat dumping dinner into the crockpot.

I had made this one before – just never froze it. . . and I’m happy to say it held up well. **The directions call for adding a can of diet pop. I didn’t freeze that – just added it when I was making it.

Overall grade for freezer meal = A. It was a great meal, easy to prepare, and made dinner a breeze.

Chinese Beef and Broccoli


So this one was supposed to be a crockpot meal, but Laura made it before me and said that cooking in the crockpot made the meat super tough. So, I just thawed and made mine in the skillet. The beef was good, but the broccoli was overcooked. I don’t think it was the best to freeze the broccoli. If I made this again, I would just buy fresh broccoli to go with it.

Overall grade for freezer meal = B. It was an ok meal, easy to prepare, but wasn’t my favorite.

Hawaiian BBQ pork


I’ve made this one before. . . and it turned out much better last time. I don’t think this one was the best for freezing. The sauce thinned out and separated. Bummer. Thankfully, it wasn’t anything that extra BBQ couldn’t fix. . . but I wouldn’t make this one as a freezer meal again. Regular crockpot meal = yes, because it’s delicious.

Overall grade for freezer meal = C. It wasn’t a great freezer meal. It was still edible with lots of BBQ sauce. BUT, this one is still on my crockpot meal rotation. Smile

  1. Good to know! I always wonder how those freezer meals will turn out. The pot roast looks delicious! I crave those kinds of meals in the fall usually.

  3. I found that doing pineapple in a crockpot took away all of its flavor. Any tips there? I am definitely going to try the pizza casserole and the pot roast that you reviewed when I do my next round of freezer meals. We grill so much during the summer that I usually save them for winter.

      It’s not really something you think about in the summer time but quick, easy meals are a good thing in my house anytime!

  6. My crock pot doesn’t come out much in summer unless I’m making pulled BBQ pork or pulled salsa chicken. For some reason I just crave those in summer!
