Weekend Update: 1/11/15

Hey! Did you have a good weekend? What were you up to?

Here’s a quick look at what we were up to this weekend. . .

We headed to Eau Claire on Friday to look for some housing options. Fingers crossed there looks like there might be a good option or two. Smile 

Saturday was pancake breakfast.


Time on the treadmill.


My least favorite activity – cleaning the bathrooms. . .


And reading a new book.

Meal prep for the week. . . egg cups with onion and spinach.


My first attempt at homemade mayo with lots of help from Scott = seriously takes two hands. . . but whoa – I don’t know if I will ever be able to go back to store bought mayo again. Life changing. Planning to add it to chicken salads for lunch this week (chicken, carrots, red grapes and walnuts).


Plus this in the crockpot for Sunday night dinner.

  1. I read It Starts with Food last year and I am doing a Whole30 right now! But I had been following mostly paleo for about 6 months so its not a huge difference for me.
    Ugh and I really hate cleaning bathrooms too! Mine just never seems to look clean no matter how much I scrub it:)

  2. I actually dont mind cleaning [I know weird] but what I hate the bathroom because I clean it and then I feel like 10 minutes later it is already dirty. My hair sheds so much

  3. I’ve never even considered making homemade mayo…how did you like it?! I’ve converted to making hummus at home, so maybe mayo will be next on the list 😉

  4. Homemade mayo – Interesting! I’m not a huge mayo gal (except on BLTs) but I’m totally going to look into it. And I have been wanting to read that Whole 30 book… and it’s a book review that I’ll actually read if you post about it 😉 Hehe!

      LOL. 🙂 I think homemade mayo is WAY different than store bought. Thick creamy delicious-ness. And yes – full book review to come!

      YES!! I just wish I remembered to take a bath more often. . . it’s just not something I think about doing to relax!

  6. Homemade mayo? I’ve never thought to make that by myself. I use maybe like once every two months, though, so I probably don’t need to bother haha.
    I spent the whole weekend laid up on the couch getting rid of a cold. It was way boring, but I’m getting better so it was worth it!
